This broccoli and sweet potato salad is really tasty, easy to prepare and perfect for lunch or dinner. It is by far one of the healthiest salads you can ever make.

How to make Broccoli and Sweet Potato Salad

Begin by cutting the washed broccoli flowerets into small pieces. Cut sweet potato and apple into very thin strips. C

Start by chopping the washed broccoli florets into bite-sized pieces. Slice the sweet potato and apple into thin strips and combine them in a medium bowl. Add the onion, garlic, and walnuts, ensuring an even distribution.

In a separate bowl, whisk together the soy sauce, olive oil, and pepper. Pour this flavorful mixture over the salad, ensuring that each ingredient is coated. Allow the salad to chill, and when ready, serve and enjoy.

This broccoli and sweet potato salad made with raw broccoli and raw sweet potato is really tasty and perfect for lunch or dinner. It is one of the healthiest salads you can make as all those good vitamins don’t get lost in the cooking process.

Ingredients
  

  • 2, 3 broccoli fresh flowerets
  • 1 1/2 inch slice fresh sweet potato, peeled
  • 1 clove garlic, chrushed
  • 1/2 small red onion, chopped
  • 1/2 small red apple
  • 2 tbsp walnuts, small chunks
  • 1 tbsp light soy sauce
  • pepper
  • 1 tbsp olive oil

Instructions
 

  • Cut washed broccoli flowerets into small pieces. Cut sweet potato and apple into very thin strips. Combine them in a medium bowl. Add the onion, garlic and walnuts and mix well. 
  • Mix the soy sauce olive oil and pepper. Stir into the salad, let chill and serve with crackers.

    Hi,
    I cant wait to make this! I was curious if the broccoli or sweet potato should be cooked? I am going to assume the sweet potato does but what about the broccoli?

      Broccoli and sweet potato are not cooked, the sweet potato is good as it is too, like carrot. Can be eat either cooked or fresh. Just make sure to cut both in small pieces.

    I steamed the veg for a minute or so to take the edge off. It was still crunchy. I also swapped the olive oil for sesame oil and added a squeeze of lemon to the dressing.
