How to make Spaghetti Carbonara

Begin by cooking the pasta in salted water until it reaches the al dente stage, following the instructions on the package. Remember to reserve some of the cooking water before draining the pasta.

While the pasta is cooking, heat oil in a frying pan and cook the Pancetta or bacon until it becomes crisp and golden brown.

In a separate bowl, whisk together the eggs, cheese, and pepper until well combined, and set aside.

Once the pasta is cooked, add it to the frying pan with the cooked pancetta/bacon, stirring to coat the pasta evenly. Remove the pan from the heat and allow it to cool slightly.

Next, add the egg and cheese mixture to the pasta, stirring thoroughly to coat the pasta with the creamy sauce. If needed, add a splash of the reserved cooking water to achieve the desired consistency.

Serve the pasta immediately, ensuring each serving is piping hot and delicious.

Ingredients
  

  • 7 oz (200g) spaghetti
  • 2 tbsp olive oil
  • 2.5 oz (70g) pancetta or bacon , cut in small pieces
  • 2 eggs , beaten
  • 1/2 cup (50g) Parmesan cheese
  • freshly ground black pepper

Instructions
 

  • Cook the pasta to the al dente stage in salted water according to package instructions. Reserve some of the cooking water and drain the pasta.
  • In a frying pan heat oil and cook pancetta or bacon until crisp.
  • Meanwhile, whisk the eggs, cheese and pepper in a bowl and set aside.
  • Add pasta and stir. to coat well. Remove from heat, allow to cool slightly and add the egg and cheese mixture.
  • Stir to coat the pasta, add a splash of reserved water if necessary to obtain the desired consistency.
  • Serve immediately.
