El pan sabe bien, el exterior sigue siendo crujiente y con una miga deliciosa, masticable y con grandes agujeros.\t<\/p>\n\t<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n\t<div class=\"wprm-fallback-recipe-ingredients\">\n\t\t<h4>Entrante de la Noche a la Ma\u00f1ana<\/h4><ul><li>22 g Entrante de masa madre con 100% de hidrataci\u00f3n (---)<\/li><li>137 ml agua a temperatura ambiente<\/li><li>110 g harina de trigo<\/li><\/ul><h4>---<\/h4><ul><li>280 g harina de cebada integral<\/li><li>400 g harina de trigo<\/li><li>6 cda salvado de trigo<\/li><li>370 ml agua<\/li><li>16g sal<\/li><li>Entrante de Noche a la Ma\u00f1ana<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t<ol><li><p>Para hacer el iniciador nocturno, por la noche revuelve el iniciador de masa madre al 100% de hidrataci\u00f3n y retira 22 g en un taz\u00f3n. Primero a\u00f1ade el agua y revuelve bien. A\u00f1ade la harina y revuelve. Cubre con pl\u00e1stico y deja reposar a temperatura ambiente durante 12-14 horas (toda la noche). (Para el iniciador de masa madre al 100% de hidrataci\u00f3n, puedes hacerlo para tener el tuyo propio - <a href=\"https:\/\/www.homecookingadventure.com\/recipes\/sourdough-starter-from-scratch\">como se muestra aqu\u00ed<\/a> - o tomar de un amigo que tenga o comprar en una tienda especializada).<\/p><\/li><li>\t\tPor la ma\u00f1ana, en un taz\u00f3n grande mezcle las harinas y el salvado de trigo con agua y el iniciador de la noche anterior hasta que est\u00e9n bien combinados. Deje reposar la masa (aut\u00f3lisis) durante 30 minutos.<\/li><li>Agrega la sal y amasa a mano durante 5-8 minutos.&nbsp;<\/li><li>Limpia el interior de un taz\u00f3n ancho con un poco de aceite vegetal. Coloca la masa en este taz\u00f3n ancho para que la masa pueda ser estirada y doblada sin sacarla del taz\u00f3n. Cubre con envoltura de pl\u00e1stico.&nbsp;<\/li><li><p>Deja que la masa fermente a temperatura ambiente durante 2.5 horas con pliegues a los 50 minutos.
