Le g\u00e2teau a une d\u00e9licieuse base de g\u00e2teau aux biscuits croustillants au chocolat et au rhum, avec une mousse moka au mascarpone et une couche de ganache au chocolat sur le dessus. Les textures se marient si bien. J\u2019adore utiliser des biscuits digestifs pour cette recette car ils ne sont pas trop sucr\u00e9s, un peu sal\u00e9s et ont une agr\u00e9able texture croustillante. Cassez les biscuits en petits morceaux puis m\u00e9langez-les avec un sirop au chocolat \u00e9pais et savoureux. Pour le sirop au chocolat, j\u2019utilise du cacao en poudre, du sucre et du beurre, ainsi qu\u2019un extrait pour plus de saveur. Il vous suffit de m\u00e9langer le mascarpone \u00e0 temp\u00e9rature ambiante avec un peu de sucre glace, du caf\u00e9 instantan\u00e9 et de l\u2019extrait de vanille. J\u2019aime g\u00e9n\u00e9ralement ajouter aussi un peu de g\u00e9latine, surtout si elle est servie dans des r\u00e9gions au climat tr\u00e8s chaud. Ensuite, incorporez de la cr\u00e8me \u00e0 fouetter bien froide et la mousse est pr\u00eate.
