Add the cold butter and, using a pastry cutter or fork, cut it into the dry ingredients until the mixture resembles coarse crumbs and the butter pieces are no larger than peas. Stir in the Parmesan cheese to distribute evenly.
Add the pumpkin purée, cottage cheese, and egg. Mix gently with a spatula or wooden spoon until the dough just comes together. Avoid overmixing to keep the biscuits tender.
Transfer the dough to a lightly floured surface. Pat or roll it into a round disc about ¾ inch (2 cm) thick.
Use a 5 cm (2 inch) round cutter to cut out biscuits, gathering and reshaping the scraps as needed.
Arrange the biscuits on the prepared baking sheet. Lightly brush the tops with olive oil and sprinkle with sesame seeds and salt.

Ingredients
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (60g) whole wheat flour
- 1 cup (100g) oats
- 2 ½ tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 tsp (3g) garlic powder
- 1/2 tsp (1g) cinnamon
- Pinch of nutmeg
- 3 tbsp (42g) cold unsalted butter , cubed
- 2 tbsp (20g) Parmesan cheese
- 1/2 cup (120g) pumpkin purée , well-drained, not watery
- 5 oz (150g) cottage cheese
- 1 egg
- olive oil , for brushing the tops
- sesame seeds , for topping
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flours, rolled oats, baking powder, salt, garlic powder, cinnamon and nutmeg.
- Add the cold butter.
- Use a pastry cutter or fork, cut the butter until the pieces are no bigger than peas.
- Add parmesan cheese and mix to combine.
- Add the pumpkin purée, cottage cheese, and egg.
- Mix gently until just combined, do not overmix.
- Turn the dough onto a lightly floured surface, shape it into a round disc about ¾ inch (2 cm) thick.
- Cut into 5 cm circles (or use a round cutter).
- Place on the baking sheet.
- Lightly brush the tops with olive oil.
- Top with sesame seeds and salt.
- Bake for 18–20 minutes, or until golden and firm to the touch.
