These Mini Pumpkin Cheesecakes are creamy, lightly spiced, and full of fall flavor. Each little cheesecake has a buttery cinnamon cookie crust topped with a creamy vanilla cheesecake and pumpkin-spiced cheesecake filling. The two fillings are spooned together to create a simple marbled effect that looks beautiful without requiring any special decorating skills.
I love making these for fall gatherings and Thanksgiving because they’re already portioned into individual servings and can be made a day ahead. The pumpkin adds just enough flavor and color to the creamy cheesecake, while cinnamon, ginger, nutmeg, and cloves give them that classic pumpkin spice flavor.
After chilling, the cheesecakes become smooth and firm enough to handle easily. Top them with a little whipped cream and caramelized pecans or walnuts just before serving for an extra festive finish.
Why You’ll Love These Mini Pumpkin Cheesecakes
- Perfectly portioned – Each cheesecake is baked in a muffin cup, making them easy to serve at parties and holiday gatherings.
- Creamy and smooth – Cream cheese, sour cream, and eggs create a soft, creamy cheesecake texture.
- Full of fall flavor – Pumpkin, cinnamon, ginger, nutmeg, and cloves bring all those familiar pumpkin spice flavors together.
- Easy to make ahead – They need several hours in the refrigerator, so they are perfect for preparing the day before.
- No water bath needed – Because these are small cheesecakes, they bake quickly and evenly without the extra step of a water bath.
- Simple but pretty – Alternating spoonfuls of vanilla and pumpkin cheesecake create a lovely marbled look with very little effort.
Ingredients You’ll Need
- Digestive biscuits or graham crackers: Form the base of the cheesecakes and add a crunchy texture.
- Unsalted butter: Binds the cookie crumbs together and adds a buttery flavor.
- Ground cinnamon: Adds warmth to the crust.
- Cream cheese: The main ingredient in the cheesecake filling, giving it a smooth and creamy texture. Use full-fat cream cheese for the best results.
- Sugar: Sweetens the cheesecake without overpowering the pumpkin flavor.
- Salt: Balances the sweetness and enhances the other flavors.
- Vanilla extract: Adds a delicate vanilla aroma to the plain cheesecake filling.
- Eggs: Help the cheesecake filling set as it bakes.
- Sour cream: Adds moisture and a slight tanginess, keeping the filling creamy.
- Pumpkin puree: Gives the second filling its pumpkin flavor and beautiful orange color. Use plain pumpkin puree, not pumpkin pie filling.
- Ground cinnamon, ginger, nutmeg, and cloves: Bring warm, classic pumpkin spice flavor to the filling.
- Whipped cream and caramelized pecans or walnuts: Optional toppings that make the mini cheesecakes extra special.
How to Make Mini Pumpkin Cheesecakes
1. Prepare the crust.
Preheat the oven to 350°F (180°C). Line a 12-cup muffin pan with paper liners. Place the biscuits in a food processor and pulse until finely crushed. Add the melted butter and cinnamon and mix until evenly moistened.
2. Bake the crust.
Divide the crumbs evenly between the muffin cups and press firmly into the bottom of each cup. Bake for 5 minutes, then remove from the oven and let cool slightly.
3. Prepare the cheesecake filling.
Reduce the oven temperature to 320°F (160°C). In a large bowl, mix the cream cheese, sugar, salt, and vanilla until smooth. Add the eggs one at a time, mixing just until incorporated. Add the sour cream and mix until combined. Avoid overmixing to prevent excess air from getting into the batter.
4. Make the pumpkin filling.
Transfer a little less than half of the cheesecake mixture to a separate bowl. Add the pumpkin puree, cinnamon, ginger, nutmeg, and cloves. Stir until evenly combined.
5. Fill the muffin cups.
Spoon alternating dollops of plain cheesecake and pumpkin filling into each muffin cup. Continue until all the filling is used, creating a simple marbled effect.
6. Bake the cheesecakes.
Bake at 320°F (160°C) for 18–20 minutes, until the edges are set.
7. Cool and chill.
Let the cheesecakes cool completely in the pan at room temperature. Refrigerate for at least 4–6 hours or overnight to allow them to set fully.
8. Decorate and serve.
Top with whipped cream and caramelized pecans or walnuts just before serving.
Tips for making the best mini pumpkin cheesecakes
- Use room-temperature ingredients. Room-temperature cream cheese, eggs, and sour cream blend more easily and help create a smooth filling.
- Don’t overmix the batter. Once the eggs are added, mix only until everything is combined. Too much air can cause the cheesecakes to rise and then sink or crack as they cool.
- Press the crust firmly. A firmly packed crust will hold together better once the cheesecakes are chilled.
- Chill before removing from the liners. The cheesecakes become firmer and easier to handle after several hours in the refrigerator.
- Make them ahead. You can prepare the cheesecakes the day before serving. Add the whipped cream and nuts shortly before serving for the best presentation.
