I wasn’t expecting much from this avocado and chicken salad, but it exceeded all my expectations. I enjoyed every last bite so much that I didn’t share it with anyone. Hope you will give it a try. It’s nutritious, healthy, and incredibly tasty.
How to make chicken, avocado, and orange salad
Start by seasoning chicken fillets with salt, pepper, or your preferred spices, and brush them with olive oil. Preheat a grill pan over medium-high heat until very hot. Cook the fillets for 3 to 4 minutes on each side until they’re cooked through.
Roughly chop the lettuce leaves and arrange them on a serving plate. Peel and segment the orange, and juice another half of an orange for the dressing. Cut the avocado and chicken into slices.
Arrange the orange segments, avocado slices, and chicken slices over the lettuce. Sprinkle with almonds and season with salt and pepper.
In a small bowl, prepare the dressing by whisking together the orange juice, mustard, oil, and honey. Drizzle the dressing over the salad and serve.

Chicken, Avocado and Orange Salad
Ingredients
- 1 orange
- 8 small lettuce leaves , washed and dried
- 2 (150 g) chicken breast fillets
- 1/2 large avocado , halved
- 2 tbsp roasted almonds
- salt and freshly ground black pepper
- juice of 1/2 orange
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp honey
Instructions
