Cinnamon Rolls with Meringue Filling

These aren’t your typical cinnamon rolls, but let me tell you, these Cinnamon Rolls with Meringue Filling are absolutely amazing—sweet with a melt-in-your mouth texture and incredibly delicious.

What sets them apart from the classic version is the dough, enriched with extra butter for an exceptionally soft texture, and a filling crafted from whipped egg whites and cinnamon, resulting in a crispy top and a smooth, tender interior. The irresistible aroma of freshly baked cinnamon rolls adds is simply irresistible. These rolls are a delightful treat for breakfast or any time of day, especially when paired with a fresh cup of coffee.

How to make cinnamon rolls with meringue filling

Begin by preparing the dough for these delicious rolls. Dissolve the fresh yeast in warm milk until fully incorporated. In a medium-sized bowl, mix the softened butter with the flour. Add the egg yolks and the milk with yeast, blending until a smooth dough forms.

Knead the dough thoroughly, then cover it with plastic wrap and refrigerate for about 1 hour to allow the yeast to develop.

Next, prepare the meringue filling. Using a mixer, whip the egg whites until foamy. Gradually add the sugar, vinegar, vanilla extract, and cinnamon, continuing to whip until stiff peaks form. Divide the meringue mixture into 3 equal portions.

To shape the rolls, preheat the oven to 180°C (350°F). Divide the chilled dough into 3 equal pieces. On a floured surface, roll out each piece into a rectangular shape about 12 inches (30 cm) long and 10 inches high.

Spread 1/3 of the prepared meringue mixture evenly over each piece of dough, leaving a 1-inch border along one long edge. Roll the dough tightly from the opposite long edge, then cut the rolled dough into 1-inch slices.

Arrange the sliced rolls on a greased baking tray, spacing them evenly apart. Sprinkle ground cinnamon over the top of the rolls.

Bake the rolls in the preheated oven for about 20 minutes or until they are nicely browned. Once baked, remove from the oven and allow them to cool slightly before serving. These cinnamon rolls with meringue filling are a delightful treat, perfect for breakfast or a sweet snack.

These Cinnamon Rolls are sweet, smooth, buttery and very delicious. The aroma of freshly baked cinnamon rolls makes them irresistible. Serve with fresh coffee, tea or milk.

Ingredients
  

  • 3 cups (375g) flour
  • 7 oz (200g) butter , cut in small cubes
  • 3 egg yolks
  • 1/3 +1 tbsp (100ml) milk
  • 10 g fresh yeast (1 tsp of active dry yeast)

Filling

  • 3 egg whites
  • 1/2 cup (120g) powdered sugar
  • 1 tbsp (15ml) vinegar
  • 1 tsp (5g) vanilla extract
  • 1/2 tsp (2g) ground cinnamon

Instructions
 

Prepare the dough.

  • Dissolve the fresh yeast in the milk. In a medium-sized bowl mix well the butter with flour. Add the egg yolks and the milk with yeast and mix until well blended.
  • Knead well, cover with plastic and refrigerate for about 1 hour to let the yeast develop.

Prepare the meringue filling.

  • Whip egg whites until foamy with a mixer and gradually add the sugar, the vinegar and vanilla extract whipping the whole time. Finally incorporate the cinnamon. Split the whites in 3.

How to shape the rolls.

  • Preheat the oven to 180 (350F).
  • Cut the dough into 3 equal pieces. Sprinkle flour on the working surface. Using a rolling pin roll out each piece into a rectangular about 12 inches (30 cm) long, 10 high.
  • Cover the dough with 1/3 of the egg whites, leaving uncovered 1 inch on each side. Roll and cut into 1 inch slices. Arrange dough pieces in a greased baking tray. Sprinkle with ground cinnamon. 
  • Bake for about 20 minutes or until nicely browned.
