These Pumpkin Oatmeal Cottage Cheese Biscuits have become a new favorite in our house. They’re soft, a little chewy, and full of that cozy pumpkin flavor everyone loves this time of year. They come together in just a few minutes, no fancy steps, no long list of ingredients.

I love that they’re made with a mix of whole wheat flour, oats, and regular flour, so they feel hearty but not heavy. Instead of lots of butter, they use cottage cheese and pumpkin purée, which keep them moist and add a nice boost of protein. You’d never guess they’re actually on the healthy side, they taste that good.

Everyone in the family loves them, warm from the oven with a little butter, or even plain as a quick snack. They’re great for breakfast, lunch boxes, or with soup at dinner. Simple, cozy, and so satisfying.

If you’re looking for an easy, healthier biscuit recipe that still feels like comfort food, this one’s a keeper.

How to make Pumpkin and Cottage Cheese Biscuits

Begin with preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper.

In a large mixing bowl, combine the flours, rolled oats, baking powder, salt, garlic powder, cinnamon, and nutmeg.

Add the cold butter and, using a pastry cutter or fork, cut it into the dry ingredients until the mixture resembles coarse crumbs and the butter pieces are no larger than peas. Stir in the Parmesan cheese to distribute evenly.

Add the pumpkin purée, cottage cheese, and egg. Mix gently with a spatula or wooden spoon until the dough just comes together. Avoid overmixing to keep the biscuits tender.

Transfer the dough to a lightly floured surface. Pat or roll it into a round disc about ¾ inch (2 cm) thick.
Use a 5 cm (2 inch) round cutter to cut out biscuits, gathering and reshaping the scraps as needed.

Arrange the biscuits on the prepared baking sheet. Lightly brush the tops with olive oil and sprinkle with sesame seeds and salt.

Bake for 18–20 minutes, or until golden brown and firm to the touch. Let cool slightly before serving warm.
