How to make baked stuffed potatoes
Preheat the oven to 230°C (450°F). Scrub the potatoes, pierce them with a fork, and place them directly on the oven rack. Bake for 30-40 minutes until soft.
While the potatoes are baking, prepare the filling. Heat oil or butter in a large frying pan over medium-high heat. Sauté the onion and garlic for about 5 minutes until soft. Add the red pepper and small pieces of chicken, cooking until the meat has lost its raw color. Stir in fresh lovage, salt, and pepper, then remove from heat.
Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out the interior, leaving about a 1/4 inch shell of potato flesh and skin. Add the scooped-out potato flesh to the filling mixture and stir to combine.
Increase the oven temperature to 250°C (480°F). Grease a baking sheet with oil. Fill the potato shells with the filling mixture and place them on the baking sheet. Sprinkle cheese on top of each filled potato. Bake for 20 minutes until the potatoes turn golden brown. Serve immediately and enjoy!

Ingredients
- 6 medium potatoes
- 1 big red onion , diced
- 2 garlic cloves , minced
- 1 red bell pepper , chopped
- 1/2 chicken breast , cut in 1/2 inch pieces
- 1 tbsp butter or olive oil
- 1 tsp fresh lovage , chopped
- 80-100 g grated cheese
- Salt and freshly ground black pepper , to taste
Instructions

Oh, these look fabulous!!! I’ve only made twice baked potatoes for a side dish…but I’d love this for an entree!
These look gorgeous and I am happy to have a whole meal in a potato. I tend to be lazy and fling them in the microwave to ‘bake’ but the results from slow oven baking are so much better.
