Grape Tomatoes with Egg on Top

We love breakfast time. Every time we have the chance we are trying to make an unique breakfast to impress our little daughters. This time they were really delighted by this breakfast of Grape Tomatoes with Egg on Top.

This idea of filling grape tomatoes with egg on top is simply amazing. The grape tomatoes have a thick skin and are sweeter than cherry tomatoes.

We used turkey chorizo alongside the stuffed tomatoes but feel free to use any chorizo you have in house. This dish is healthy, delicious and nutritious and a good way to start the day, that’s for sure.

How to make grape tomatoes with egg on top

Preheat your oven to 400°F (200°C) to start. Begin by scooping out the pulp from the grape tomatoes, setting it aside, and placing the hollowed-out tomato shells on a nonstick or cast iron pan.

In a bowl, beat together eggs with cheese, salt, and pepper until well combined. Spoon this egg mixture into the tomato shells that are placed on the pan.

Next, cut the chorizo into 2-inch pieces and arrange them around the tomatoes on the pan.

Bake the tomatoes with the egg mixture and chorizo in the preheated oven for about 20 minutes, or until the eggs are set and the tomatoes are tender.

While the dish is baking, combine the radish germs with the reserved tomato pulp and season it with soy sauce to taste.

Once baked, remove the tomatoes from the oven, sprinkle chopped chives on top for added flavor, and serve warm alongside the radish germs salad.

Ingredients
  

  • 12 grape tomatoes
  • 1 egg
  • 1/3 cup grated cheese
  • 5 oz (150g) turkey chorizo sausage
  • salt and freshly ground black pepper
  • chives and radish germs for serving , optional
  • soy sauce

Instructions
 

  • Preheat the oven to 400F (200C).
  • Scoop the grape tomatoes and set aside the pulp. Place the tomato shells on a nonstick pan. I used an iron cast pan.
  • Beat egg with cheese, salt and pepper.
  • Spoon the egg mixture into the tomatoes shells.
  • Cut the chorizo in 2 inch pieces and place in the pan.
  • Bake for about 20 minutes.
  • While baking combine radish germs with tomato pulp and season with some soy sauce.
  • Remove from oven and sprinkle chives on top and serve warm with the radish germs salad.
