Homemade Tagliatelle with Tomato Sauce

Have you ever tried homemade pasta? No store-bought pasta could compare with them. You might think it is hard to make homemade pasta from scratch especially if you don’t have a pasta machine. I will show you how you can make Homemade Tagliatelle with no pasta machine, all you need is a rolling pin and a good knife.

Once the homemade tagliatelle are done, add a delicious homemade sauce and you will have a delightful lunch or dinner you and your family or guests can hardly forget.

This homemade sauce is just one of the ideas you can use for the homemade pasta. It is made using a lot of fresh vegetables and chicken. It is a delicious, flavorful sauce, served right away over the homemade tagliatelle. Sprinkle some freshly grated Parmesan on top and you’ll get a a wonderful, comforting dish.

How to make homemade tagliatelle without a pasta machine

Begin by placing the eggs in the middle of the flour mound. Gradually mix the eggs with the flour using a fork until the mixture starts to come together. Then, work the dough with your hands until it becomes elastic.

Next, divide the dough into two or three parts and work with each part separately. Using a rolling pin, roll each portion as thinly as possible, forming a rectangular sheet.

Dust each sheet with flour, roll it up, and use a sharp knife to cut the rolled dough into tagliatelle strips. When you unroll the pasta, you will have long, thin strips. Let the tagliatelle dry for at least 10 minutes.

To cook the tagliatelle, place it in salted boiling water and cook until al dente, about 3–4 minutes.

How to Prepare the Tomato Chicken Sauce

While the pasta dries, heat oil in a large, heavy saucepan. Add the onion and cook for 5 minutes until soft. Then, stir in the carrot, garlic, celery root, and bell pepper, and cook for another 5 minutes.

Add the chicken to the saucepan and cook until the meat has lost its raw color. Stir in the paprika, then add the tomatoes, water, salt, and pepper. Bring the mixture to a boil, then reduce the heat, cover, and simmer until most of the water has evaporated. Add the chopped basil a few minutes before the sauce is done.

Serve the tagliatelle with the tomato chicken sauce, topped with freshly grated cheese.

  • Dust the sheet with flour, roll and start cutting the tagliatelle with a sharp knife. when you unroll the pasta, they are the full length of the sheet. Let the tagliatelle dry for at least 10 minutes.

Hot to prepare the tomato chicken sauce

  • Heat oil in a heavy large saucepan. Add onion, cook for 5 minutes until soft. Stir in carrot, garlic, celery root and bell pepper, cook for another 5 minutes .
  • Add the chicken and cook until the meat has lost its raw color. Add paprika, stir, and then add the tomatoes, 1 cup of water, salt, and pepper. Bring to a boil, then lower the heat, cover, and simmer until there is no water left. Add the chopped basil a few minutes before is done. 
  • Serve with freshly grated cheese.
