Vegetable Boeuf Salad

This Romanian Vegetable Boeuf Salad one of the most delightful appetizers my mom uses to make for holiday tables. It is really easy to prepare and makes a great choice for any family or friend gathering.  You can serve this salad with homemade crackers, tortilla chips or nachos.

How to make Romanian Vegetable Boeuf Salad

Begin by placing the potatoes, with their skins on, in a steamer rack over boiling water. Steam until tender. Follow by steaming the carrots, peas, and chicken breast until they are also tender. If you don’t have a steamer rack, you can boil the vegetables and chicken until they are cooked through. Allow everything to cool.

Once cooled, peel the potatoes and chop them into small pieces. Chop the carrots, cucumbers, and chicken breast into small pieces as well. In a large salad bowl, combine the chopped potatoes, carrots, cucumbers, chicken breast, and peas. Season with salt and freshly ground black pepper to taste, and mix carefully.

Prepare the mayonnaise by beating the egg yolks and mustard in a small bowl with a mixer until the mixture becomes thick. Gradually add the oil while continuing to beat. Once the mayonnaise is ready, gently fold it into the vegetable and chicken mixture. Transfer the salad to a serving dish.

Garnish with black olives and serve with crackers. This light and nutritious salad is perfect for a healthy lunch or dinner, offering a delightful combination of flavors and textures.
