Vegetable Boeuf Salad

This Romanian Vegetable Boeuf Salad is one of the most delightful appetizers my mom used to make for our holiday tables. Its vibrant mix of flavors and textures always made it a standout dish at family gatherings. The salad is not only visually appealing but also incredibly easy to prepare, making it an excellent choice for any occasion, for either a festive holiday meal or a casual get-together with friends.

The combination of finely chopped vegetables, tangy pickles, and a creamy dressing creates a flavorful blend that is both refreshing and satisfying. The salad can be customized with your favorite vegetables, and adding cooked meat like chicken breast can make it even more hearty. We enjoy serving this salad with homemade crusty bread or crackers which complement its texture.

How to make Romanian Vegetable Boeuf Salad

Begin by placing the potatoes, with their skins on, in a steamer rack over boiling water. Steam until tender. Follow by steaming the carrots, peas, and chicken breast until they are also tender. If you don’t have a steamer rack, you can boil the vegetables and chicken until they are cooked through. Allow everything to cool.

Once cooled, peel the potatoes and chop them into small pieces. Chop the carrots, pickled cucumbers, and chicken breast into small pieces as well. In a large salad bowl, combine the chopped potatoes, carrots, cucumbers, chicken breast, and peas. Season with salt and freshly ground black pepper to taste, and mix carefully.

Prepare the mayonnaise by beating the egg yolks and mustard in a small bowl with a mixer until the mixture becomes thick. Gradually add the oil while continuing to beat. Once the mayonnaise is ready, gently fold it into the vegetable and chicken mixture. Transfer the salad to a serving dish.

Garnish with black olives and serve with crackers or crusty bread. This nutritious salad is perfect for a healthy lunch or dinner.

This Vegetable Salad (Boeuf Salad) is one of the most delightful appetizers my mom used to make for holiday tables. It is really easy to prepare and makes a great choice for any family or friend gathering.  You can serve this salad with homemade crackers, tortilla chips or nachos.

Ingredients
  

Salad Ingredients

  • 5 medium potatoes
  • 5 medium carrots, peeled
  • 5 pickled cucumbers 3.5 inches (9 cm) long
  • 1/2 chicken breast (optional)
  • 300 g frozen peas
  • salt and fresh ground pepper

Mayonnaise Ingredients

  • 2 egg yolks
  • 1 tsp mustard
  • 1 cup sunflower oil

Garnish

  • black olives red pepper slices (optional)

Instructions
 

  • Place potatoes with skin on in a steamer rack over boiling water and steam until tender. Then steam the carrots, peas and chicken breast until tender. Let them cool. (if you don't have a steamer rack, boil the vegetables and chicken until tender)
  • Peel the potatoes and chop them in small pieces. Chop the carrots, cucumbers and chicken breast also in small pieces. Combine them with potatoes and peas in a large salad bowl. Add salt and freshly-ground black pepper, to taste and mix carefully.
  • Prepare the mayonnaise. Using a mixer, beat yolks and mustard, in a small bowl until thick. Gradually add oil beating all the while. When ready gently fold in to vegetables. Pour all mixture in the serving dish. Garnish with black olives and serve with crackers.
