Butter Cookies (Pastisetas)

Is there anyone who doesn’t enjoy butter cookies? You need to try this version of Butter Cookies also known as Pastisetas, as you will probably change your mind. These cookies have a tender interior that practically melts in your mouth, complemented by a slight crispiness on the outer layer. With their buttery richness, they make a delightful accompaniment to morning tea or coffee, or simply enjoy them as a satisfying snack.

The recipe is slightly different from other butter cookie recipes, as the batter is creamy and able to be piped. You need to work as quickly as you can as the batter can harden and makes the piping more difficult. You can make different shapes, and depending on the cookie size the baking time may vary as well.

These beautiful Butter Cookies or Pastisetas are one of the best butter cookies I’ve made so far, totally addictive and delicious.

How to make these butter cookies-Pastisetas

To start, preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.

In a bowl, place the butter and use a hand mixer to beat it until creamy. Add powdered sugar and vanilla extract, and continue mixing for about 12 minutes until the mixture turns white and creamy.

Using a spatula, gently fold in the flour until it is fully incorporated into the butter mixture.

Transfer the cookie batter into a piping bag fitted with a 1M (½ inch-1 cm) star tip.

Pipe the cookie dough onto the prepared baking sheets, forming cookies of your desired size and shape.

Bake the cookies in the preheated oven for 10-12 minutes, or until the base of the cookies begins to brown.

Once baked, remove the cookies from the oven and allow them to cool completely on a wire cooling rack before serving. Enjoy these delicious buttery and vanilla-flavored cookies!

These Butter Cookies, also known as Pastisetas, have a tender interior that practically melts in your mouth, complemented by a slight crispiness on the outer layer. Ingredients
  

  • 9 oz (250g) butter , room temperature
  • 1/2 cup (60g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • 2 cups (250g) flour

Instructions
 

  • Preheat oven to 350F (180C). Line 2 baking sheets with parchment paper.
  • Place butter in a bowl and use a hand mixer to mix until creamy. Add powdered sugar and vanilla extract and continue mixing for another 12 minutes until the mixture becomes white and creamy.
  • Using a spatula incorporate flour into the butter mixture until completely combined.
  • Transfer the batter into a piping bag fitted with a 1M (½ inch-1 cm) star tip.
  • Form cookies on the prepared baking sheets.
  • Bake for 10-12 minutes or until the base begins to brown.
  • Let the cookies cool completely on a cooling rack before serving.

      personaly, l’m not a profesional baker, but l think the recipe without an egg is just fantastic.
      they wouldn’t be the same with an egg. my opinion. l make them often.
