This Chicken Salad with Lettuce and Beetroot is one of the easiest recipes for a quick dinner. All you need is some chicken breast, some lettuce, and beetroot salad which was already made in advance.

Begin by preheating your oven to 400°F (200°C). Wash the beetroots thoroughly to remove any dirt, then place them on a baking sheet. Roast the beetroots in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. Once they have cooled, peel off the skin, which should come off easily if they are well-roasted.
Next, cut the beetroots into thin slices or cubes, according to your preference. You can also grate the beetroots using the large holes of the grater. Season them with salt, sugar, and a bit of vinegar. For an extra touch of flavor, you can add some horseradish.
Finally, refrigerate the beetroot salad until you are ready to serve it.
How to make chicken salad with lettuce and beetroot
Begin by cutting the chicken breast into 3-4 long strips. In a medium frying pan, melt butter over medium-high heat. Add the chicken strips and sprinkle with salt and pepper. Let the chicken cook undisturbed for at least 2-3 minutes until a golden crust forms. Flip the chicken and cook for another few minutes on the other side. Once done, sprinkle lemon juice all over the chicken.
