How to make cottage cheese brownies
Begin with preheating the oven to 350°F (180°C) and lining an 8 × 8-inch (20 × 20 cm) baking pan with parchment paper.
In a blender or food processor, blend the cottage cheese, applesauce, honey, eggs, salt, instant coffee powder and vanilla extract until completely smooth and creamy.
Whisk in the oat flour and cocoa powder, being careful not to overmix. If using chocolate chips or nuts, fold them in at this stage.
Pour the batter into the prepared pan and spread it evenly. Top with some more chocolate chips if desired. Bake for 20–22 minutes, or until a toothpick inserted in the center comes out mostly clean, with a few moist crumbs remaining, this ensures a soft, fudgy texture.
Allow the brownies to cool completely in the pan before slicing into squares. As they rest, the texture sets beautifully, becoming rich and tender, with a deep chocolate flavor that feels indulgent yet perfectly balanced.

Ingredients
- 1 cup (240g) cottage cheese
- 1/3 cup (80g) unsweetened applesauce
- 3 tbsp (60g) honey or maple syrup
- 2 large eggs
- 1 tsp (5g) vanilla extract
- 1/2 tsp (1g) instant coffee powder
- 1/2 cup (50g) oat flour
- 1/2 cup (60g) unsweetened cocoa powder
- 1/4 tsp (1g) salt
- 1/4 cup (30g) dark chocolate chips
Instructions
- Preheat the oven to 350°F (180°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
- Put the cottage cheese in a blender or food processor.
- Blend the cottage cheese until smooth.
- Add applesauce, honey, eggs, instant coffee powder, salt and vanilla extract.
- Blend again until smooth.
- Transfer the mixture into a bowl.
- Add the oat flour and cocoa powder.
- If using chocolate chips or nuts, fold them in.
- Pour batter into the prepared pan and spread evenly.
- Sprinkle some more chocolate chips on top if desired.
- Bake for 20–22 minutes, or until a toothpick inserted comes out mostly clean (a few crumbs are okay, don’t overbake).
- Let brownies cool completely in the pan before cutting into squares.
