Apple Crisp Pancakes

When I saw this idea of adding a streusel topping over the pancakes I really wanted to give them a try. Apples are one of my family favorites so these Apple Crisp Pancakes sounded like a wonderful healthy delicious treat.

I must say these apple crisp pancakes are the best pancakes I have ever made. They’re incredibly fluffy and bursting with flavor, thanks to the tender apple chunks folded into the batter. But what truly takes them over the top is that crispy streusel topping. The sugar gets caramelized as they cook and adds a perfect crunch. With their fantastic texture and mouthwatering taste, I can already tell these pancakes will be a repeat on my breakfast menu.

Next time you’re in the mood for pancakes, I highly recommend giving this delicious recipe a try. They’re so tasty that you could enjoy them on their own, no need for maple syrup or whipped cream, though adding those toppings would certainly take them to the next level of temptation.

How to make apple crisp pancakes

Begin by preparing the streusel. In a medium bowl, combine brown sugar, flour, oats, and cinnamon. Use a pastry blender or fork to cut in the butter until the mixture is crumbly. Set aside.

Next, prepare the pancake batter. In another bowl, mix together flour, sugar, baking powder, salt, cinnamon, and nutmeg. Add the egg, milk, and oil, and mix until smooth.

Peel and dice the apple, then fold it into the pancake batter.

Heat a nonstick pan over medium-high heat. Pour 1/4 cup of batter onto the hot pan for each pancake. Sprinkle each pancake evenly with 2 tablespoons of the streusel mixture, gently pressing it into the batter. Cook for about 2 to 3 minutes, or until bubbles form on the surface and the edges start to dry. Flip the pancakes and cook for an additional 2 to 3 minutes, or until they are light golden brown on both sides.

Serve the pancakes warm, drizzled with maple syrup, honey, or topped with whipped cream for a delicious breakfast treat.

These Apple Crisp Pancakes are fluffy and so flavorful, with chunks of soft apples inside. The best part of all is the crispy streusel topping. They are simply amazing, and I am sure you will love them too.

Ingredients
  

Streusel Topping

  • 1/4 cup (50g) brown sugar
  • 1/4 cup (30g) flour
  • 1/4 cup (25g) oats
  • 3 tbsp (45g) butter
  • 1/2 tsp (2g) cinnamon

Pancakes Batter

  • 1 ¼ cups (160g) flour
  • 1 tbsp (15g) sugar
  • 1/2 tsp (2g) salt
  • 1 ½ tsp (6g) baking powder
  • 1/2 tsp (2g) cinnamon
  • 1/4 tsp (1g) nutmeg
  • 1 egg
  • 1 cup (240ml) milk
  • 2 tbsp (28g) vegetable oil
  • 1 cup apple , peeled and diced (about 1 apple))

Instructions
 

Prepare the streusel.

  • In a medium bowl, mix brown sugar, flour, oats and cinnamon.
  • Cut in butter using a pastry blender or fork until mixture is crumbly. Set aside.

Prepare the pancake batter.

  • In another bowl, mix flour with sugar, baking powder, salt, cinnamon, and nutmeg. Add egg, milk, and oil. Mix until smooth.
  • Peel and dice the apple and combine with pancake batter.

  • Heat a nonstick pan over medium high heat. For each pancake, pour 1/4 cupful batter onto hot pan. Sprinkle each pancake evenly with 2 tablespoons of Streusel mixture. You can press the streusel slightly to stick better to the pancake.  Cook for about 2 to 3 minutes or until bubbly on top and dry around edges. Turn and cook on the other side until light golden brown around edges about 2 or 3 minutes more.

  • Drizzle with maple syrup, honey, or top with whipped cream.

    Pancake perfection! My daughter has recently become obsessed with pancakes (especially blueberry) and she loves apples (“apple” was actually her 3rd word after “mama” and “dada”) so I know she would devour these beauties!

    The best way to use my apples before they rot!!
    The idea of using streussel, unique!!!
    Now, the only way to improve them is to substitute 1/4 of the pancake flour with flaxseed meal and add 1/4 more of milk and let the pancake mix sit for 15 minutes so the flaxseed does its magic. Also, you can add half a spoon of unflavored psyllium in order to make them more fluffy.
    By the way, here, for the pancake mix, you use baking powder, whereas in the youtube video you use yeast!! I will try both, with yeast, and instead of baking powder, I will use sodium bicarbonate in order to avoid any aluminates!!!

    they seem to be wonderful but every time I flip it on the streusal side they end up burning. is it because i dont have a non-stick pan? I put cooking spray before I put the pancake on the pan. what am i doing wrong? 🙁

    I tried these today. The recipe was awesome but I didn’t had a nonstick pan… all I had was an old looking pan… the pancake failed so I decided to use a waffle machine 🙂 It worked!!!
