Scrambled Eggs with Sunflower Seeds

We make these Scrambled Eggs with Sunflower Seeds pretty often for breakfast. Lately it has been one of my favorite ways of preparing eggs.

Adding seeds to eggs is a great way of giving seeds to kids, especially sesame or flax seeds which are harder to be accepted by themselves. My daughters really love eggs prepared this way. I always feel so good after they eat, as I know they had a good healthy meal. I usually like to add seeds in salads, breads, crackers, anything that might work in and bring more nutrients to their meal.

I didn’t add seeds in these scrambled eggs just because they are healthy and nutritious,  I really love to add them as they give a wonderful flavor and texture. If you didn’t try by now you should definitely try at least once to see how delicious it is. The melting Mozzarella is a great addition as well, I mean, is there a time when cheese isn’t a good addition?

You can serve these scrambled egg alongside crispy bacon slices, toast bread, any salad you prefer, it is wonderful. By far one of the most delicious and nutritious breakfasts you can get 🙂

Scrambled Eggs with Seeds -adding seeds in scrambled eggs is not only healthy but give a wonderful taste and texture. If you didn't try by now you should definitely try at least once to see how delicious it is.
Servings 2 servings
Prep Time 10 minutes
Cook Time 5 hours
Total Time 15 minutes

Ingredients

  • 3 tbsp sunflower seeds
  • salt
  • 1 tbsp sesame seeds
  • 1 tbsp flax seeds
  • 1 tbsp butter
  • 4 oz (100g) Mozzarella Cheese , thinly sliced
  • freshly ground black pepper
  • 4 eggs

Alongside

  • 4 bacon slices
  • toast bread
  • fresh chives

Instructions

  • Place sunflower seeds and salt into a hot dry skillet, on medium heat and let them toast stirring from time to time so they don't burn.
  • Add sesame seeds and flax seeds and give them a stir. Immediately add butter and let it melt.
  • Add Mozzarella slices and stir to combine.
  • Add whole eggs and gently stir and cook until slightly underdone. Remove from heat. The eggs will continue to cook in the hot skillet. Add freshly ground black pepper.
  • Serve with toast bread, bacon slices, greens, whatever works better for you. Bread and bacon can be made before preparing the eggs.
  • To prepare the bacon simply add the bacon slices to a skillet on medium heat. When they start to curl turn them to cook on the other side. Keep flipping and turning the bacon so that it cooks evenly to desired crispness. Transfer on a paper towel to drain.

First of all, I love your name! haha since I have the same name, I cook every single day, breakfast/lunch/dinner..picky hubby and 2 kids so you can imagine..I discovered your website when I searched for baked honey sesame chicken (which I’ve tried right away..my whole family loved it)..will try this egg recipe tomorrow for breakfast…I also love to sneak in seeds into my kids..I have one question..i see you use the cast iron skillet a lot which I will be purchasing in a few weeks for myself (holiday present?) I also need a new skillet for stir fries and such..which skillet are you using in this video? I see its stainless steel..model? thanks!

Hi Ella.. nice to meet you too 🙂 So glad you are trying my recipes:) hope you enjoyed the eggs as well.. Yes I have a 12 inch stainless steel pan, a local brand so it's not familiar but what is important is that is good quality stainless steel with double bottom.. I don't use it that often though  because I like the cast iron skillet  a lot and I also have a 100% ceramic 12 inch pan.. which works great too

I tried and loved this recipe this morning in a cast iron pan. I added sunflower and flax seeds. Do not have your burner on too hot (mine was medium) because the flax seeds will start burning right away. I did not have a burnt flavoring though. I added French beans for a few minutes then the scrambled eggs. It was great. The sunflower seeds added a wonderful flavor. I will continue to do this with my scrambled eggs. Thank you.

Hi Ella! It’s not necessary to say that I love your recipes (everyone does 🙂 ) and that they are all great (you already know 🙂 ). I can hardly wait to make this “delish thing” bur before I get started I want to ask you about the bread: it is home made too (if yes, pleaaase show me which one) or it’s bought? Thank you!

Hi Georgiana:) I am so glad you like my recipes.. for this recipe I've used a store-bought flat bread.. but feel free to use homemade bread .. will be delicious with any you make from my recipes.. you can try naan bread.. cheese bread… no knead bread..potato bread..

Hi! I love your website and everything about it!! The videos are my favorite. You make everything look so easy. This recipe in particular is genius! Just tried it with little substitutions based on what i had at home. Pumpkin seeds instead of sunflower, chia instead of flax seeds, feta for mozzarella. Amazing!! I don’t really like cooking but love to bake. Forever a fan. Thank you so much for the great recipes!! Greetings from California! 🙂
