How to make oven-baked kofta

Begin with preheating the oven to 425°F (220°C) and greasing an 8×13-inch (21×35 cm) sheet pan. Line it with parchment paper for easy cleanup.

In a large bowl, add the ground meat, breadcrumbs, and egg. Mix in the chopped onion, parsley, spices, and oil. Fold the ingredients together gently. Avoid overmixing to keep the kofta tender.

Next, press the mixture evenly into the prepared pan, about ¾ inch (2–2.5 cm) thick. Smooth the top without compacting too much, then lightly score 1-inch-wide logs with a knife or dough cutter. Drizzle olive oil over the top.

Bake on the middle oven rack for 12 minutes, then transfer to the top rack and broil for 3–4 minutes until golden and slightly crisp. Let the kofta rest for 3 minutes before serving.

Meanwhile, prepare the yogurt-tahini sauce by whisking the yogurt with tahini, lemon juice and salt until smooth. Taste and adjust salt or lemon juice, then let it rest for 10 minutes to mellow the flavors.

Serve the kofta with warm pita or flatbread, topped with sliced red onion, pickles, fresh cucumber, lettuce, and a drizzle of the yogurt-tahini sauce.

Ingredients
  

  • 1 pound (500g) mixed ground beef and pork , lean
  • 1/3 cup (45g) breadcrumbs
  • 1 egg
  • 2 tbsp (40g) onion , finely chopped
  • 2 tbsp fresh parsley , finely chopped
  • 1 tsp (2g) ground cumin
  • 1 tsp (2g) ground coriander
  • 1 tsp (3g) sweet paprika
  • 1/4 tsp (1g) smoked paprika
  • 1/2 tsp (2g) garlic powder
  • 3/4 tsp (4g) fine salt
  • 1/4 tsp (1g) black pepper
  • 1 tbsp (15g) olive oil , for the meat mixture
  • a drizzle of olive oil , over the top, bfore baking

Yogurt–Tahini Sauce

  • 1 cup (240g) Greek yogurt
  • 2 tbsp (30g) tahini
  • 1 small garlic clove , minced
  • 1 tbsp (15g) fresh lemon juice
  • 1/2 tsp (2g) salt
  • drizzle of olive oil , optional

Instructions
 

  • Preheat the oven to 425°F (220°C). Grease and line a 8×13-inches (21x35cm) sheet pan with parchment paper.
  • In a large bowl, add the ground meat. Add breadcrumbs and egg.

  • Continue adding the onion, parsley and spices.

  • Add a tablespoon of olive oil.

  • Fold in the meat just until combined. Do not overmix.

  • Press the kofta mixture into an even layer, thickness: ¾ inch (max 1 inch -2.5 cm).

  • Smooth the top, don’t compact hard.

  • With your dough cutter or knife, lightly score 1-inch-wide logs.

  • Drizzle the top with olive oil.

  • Cook for 12 minutes on the middle shelf, then transfer to the top shelf. Grill or broil for 3-4 minutes at the maximum temperature.

Prepare yogurt tahini sauce.

  • In a bowl, whisk all the ingredients until smooth.
