Beef Quesadillas

These mouthwatering Beef Quesadillas are a satisfying dish, perfect for a quick lunch or a hearty dinner. Tender beef, cooked with flavorful spices, fills each quesadilla. The warm crispy tortillas hold the beef and gooey cheese, creating a delightful combo of crunch and softness. 

For these quesadillas I have used 10-inch (25cm) flour tortillas but feel free to use any other size you like best or have on hand. Whenever possible, I like to use homemade tortillas which I highly recommend. They are easy to prepare and better than the store-bought ones.

Enjoy these quesadillas with homemade guacamole and sour cream,  or with fresh lettuce, juicy tomatoes or zesty salsa.

How to make Beef Quesadillas

Begin by heating a tablespoon of oil, then add and cook the onion until softened, which usually takes about 5 minutes. Afterward, incorporate the garlic and cook for an additional minute.

Next, add the ground meat, and cook it thoroughly for approximately 10-12 minutes, ensuring it’s completely done. As you cook, crumble the meat for an even texture.

Add the paprika, cumin, chili powder, thyme, salt, and pepper, and give it a good stir to blend the flavors. Integrate the tomato paste and stir again until well combined.

Once done, take it off the heat. Proceed to spread grated cheese on one side of the tortillas. Top it with the beef mixture, adding another layer of grated cheese for extra richness. Fold the tortillas in half.

For cooking, warm about a tablespoon of oil in a large non-stick pan. Cook two quesadillas at a time, allowing them to cook for roughly 2 minutes on each side. Look for a golden brown and crisp exterior, and ensure the cheese has melted.

Afterward, cut the quesadillas into wedges and serve alongside guacamole, sour cream, or salsa for an extra burst of flavor. Remember to store any leftovers in the refrigerator to save them for later.

These mouthwatering Beef Quesadillas are a satisfying dish, perfect for a quick lunch or a hearty dinner. Tender beef, cooked with flavorful spices, fills each quesadilla. The warm crispy tortillas hold the beef and gooey cheese, creating a delightful combo of crunch and softness.

Ingredients
  

  • 5 flour tortillas – 10-inch (25cm) each
  • 10 oz (300g) cheese (Mozzarella or Cheddar) , grated

For the Beef

  • 1 tbsp olive oil
  • 1 (5 oz- 150g) medium onion , diced
  • 3 cloves garlic
  • 1 pound (500g) lean ground beef
  • 1 tbsp (7g) smoked paprika
  • 1 tsp (3g) chili powder
  • 2 tsp (7g) ground cumin
  • 1 tbsp (3g) thyme
  • 1/3 cup (70g) tomato paste
  • 1 tsp (5g) salt
  • freshly ground black pepper

Instructions
 

Prepare the beef.

  • Heat 1 tablespoon of oil, add the onion and cook for 5 minutes until softened. Add garlic and cook for 1 minute more.
  • Heat 1 tablespoon of oil, add the onion and cook for 5 minutes until softened. Add garlic and cook for 1 minute more.
  • Add paprika, cumin, chili powder, thyme, salt and pepper. Stir to combine. Add tomato paste and stir again to combine.
  • Remove from heat and cool slightly.

Assemble and cook the quesadillas.

  • Spread grated cheese on one-half of the tortillas.
  • Top with beef mixture and spread more grated cheese.
  • Fold the tortillas in half.
  • For cooking, heat about 1 tablespoon of oil in a large non-stick pan.
  • Cook two quesadillas at a time, for about 2 minutes on each side until golden brown and crisp, and cheese is melted.
  • Cut the quesadillas in wedges and enjoy alongside guacamole, sour cream or salsa.
  • Keep the leftovers refrigerated.
