Cherry Summer Dessert – Cherry Magic Custard Cake

This Cherry Summer Dessert is one of my favorite childhood treats. It’s very easy to assemble, and the fascinating part is that it forms three distinct layers while baking.

I love the refreshing taste of this magic custard cake, enhanced by the flavor and texture of the cherries. For a classic and elegant dessert, you can also make it plain without fruit. This cake is perfect year-round, even for holiday tables.

How to make this cherry summer dessert

To begin, preheat your oven to 150°C (300°F). Prepare a 7×10 inch baking pan by greasing it thoroughly and dusting it with flour to ensure the cake doesn’t stick.

How to prepare the custard mixture

Separate the egg yolks from the egg whites into different bowls. In a large mixing bowl, combine the egg yolks with sugar, butter, and vanilla extract, mixing until the mixture is smooth and creamy. Gradually add flour to the yolk mixture, stirring until well blended. Slowly incorporate the milk, continuing to mix until the batter is homogeneous and smooth.

In a separate bowl, whip the egg whites until they become foamy and form stiff peaks. Gently fold the whipped egg whites into the yolk mixture, being careful to maintain the light and airy texture.

Pour the combined mixture into the prepared baking pan, spreading it evenly. Place the pan in the preheated oven and bake for 90 minutes. After the first 15 minutes of baking, remove the pan from the oven and distribute cherries evenly over the surface of the cake. Return the cake to the oven to finish baking.

Once the baking time is complete, remove the cake from the oven and allow it to cool completely at room temperature. After it has cooled, refrigerate the cake to let it set further. Before serving, sprinkle the top with powdered sugar for a decorative touch.

This cake, with its light texture and the added sweetness of cherries, makes for a delightful dessert, especially when served chilled.

This Cherry Summer Dessert is an easy refreshing custard cherry dessert. What is interesting is the fact that while baking it forms by itself into three different delicious layers.

Ingredients
  

  • 4 eggs
  • 1/2 cup (113g) butter , at room temperature
  • 1 cup (125g) all-purpose flour
  • 2 cups (500ml) milk
  • 1 tsp (5g) vanilla extract
  • 2/3 cup (135g) sugar
  • 1 cup fresh cherries , seeded

Instructions
 

  • Preheat the oven to 150C (300F).Grease a 7×10 inch baking pan and dust with flour. 
  • Separate egg yolks form egg whites. Mix egg yolks with sugar, butter and vanilla extract until smooth. Add flour and mix until well blended. Add milk and continue mixing until homogenous. 
  • Whip egg whites until foamy and form stiff peaks. Fold in egg whites into yolks mixture.
  • Pour the mixture into prepared baking pan and bake for 90 minutes. After the first 15 minutes in the oven add cherries on top of the cake all over its' surface. 
  • Let cool completely at room temperature and refrigerate. Sprinkle powdered sugar before serving.

    This cake is fabulous. I had frozen sweet cherries so i used those. With all of the excess cherry juice i added some sugar and cornstarch to make a serving sauce.
