These Pistachio Rolls are soft, fluffy, and filled with a rich pistachio mixture and crunchy chopped pistachios. Each roll is topped with a creamy pistachio cream cheese frosting and a sprinkle of ground pistachios for even more flavor.
I love how the pistachio flavor comes through in every layer, from the filling to the frosting, with little bits of pistachios adding a pleasant crunch. These homemade rolls are perfect for a weekend breakfast, brunch, or an afternoon treat with a cup of coffee. They’re worth the wait while the dough rises, and the combination of fluffy rolls, rich pistachio filling, and creamy frosting makes them extra special.
Why You’ll Love These Pistachio Rolls
- Full of pistachio flavor. Ground pistachios in the dough, pistachio cream in the filling, and chopped pistachios throughout give these rolls plenty of nutty flavor.
- Soft and fluffy. The enriched yeast dough bakes into tender rolls with a light, pillowy texture.
- Creamy pistachio frosting. The cream cheese topping adds a little tanginess that balances the sweetness of the filling.
- Easy to make ahead. You can prepare the dough and filling in advance, making these rolls a lovely option for a relaxed breakfast or brunch.
- No cinnamon needed. Pistachios take center stage, with vanilla adding a little extra warmth to the flavor.
Ingredients You’ll Need
For the Dough
- All-purpose flour: Forms the structure of the rolls.
- Ground pistachios: Add a subtle nutty flavor and color to the dough.
- Active dry yeast: Helps the dough rise and gives the rolls their soft texture.
- Milk: Adds moisture and richness. Use lukewarm milk to help activate the yeast.
- Sugar: Feeds the yeast and lightly sweetens the dough.
- Salt: Balances the sweetness and enhances the flavor.
- Eggs: Add richness, tenderness, and structure.
- Melted butter: Makes the dough soft and flavorful.
- Vanilla extract: Adds a delicate aroma that complements the pistachios.

- Powdered sugar: Adds sweetness and helps create a smooth filling.
- Vanilla extract: Enhances the nutty flavor.
- Salt: Balances the sweetness.
- Chopped pistachios: Add a little crunch throughout the rolls.
For the Cream Cheese Frosting

- Vanilla extract: Complements the pistachio flavor.
- Milk: Helps adjust the frosting to a smooth, spreadable consistency.
- Ground pistachios: For sprinkling over the finished rolls.
How to Make Pistachio Rolls
1. Prepare the dough
In a medium bowl, combine the yeast, 1 teaspoon of sugar, and ¼ cup of lukewarm milk. Let the mixture rest for 5–10 minutes, until the yeast becomes foamy.
Add the flour, ground pistachios, remaining sugar, and salt. Pour in the remaining milk and add the eggs, vanilla extract, and melted butter. Knead until the dough becomes smooth and starts to pull away from the sides of the bowl. You can knead by hand or use a stand mixer or hand mixer with dough hooks.
Transfer the dough to a lightly oiled bowl, cover, and let it rest at room temperature for 10–15 minutes.
2. Make the pistachio filling
In a small bowl, mix the pistachio cream, softened butter, powdered sugar, vanilla extract, and salt until smooth and spreadable. Set aside.
3. Roll out the dough
Transfer the dough to a lightly floured or oiled surface. Roll it into a rectangle measuring approximately 12 × 18 inches (30 × 45 cm).
Spread the pistachio filling evenly over the dough, reaching close to the edges. Sprinkle the chopped pistachios over the filling.
4. Shape the rolls
Cut the rectangle into 12 equal strips. Roll each strip into a spiral and place the rolls in a parchment-lined 9 × 13-inch (23 × 33 cm) baking pan, leaving a little space between them.
Cover loosely with plastic wrap and let the rolls rise in a warm place for about 1 hour, or until doubled in size. If the plastic wrap touches the dough, lightly grease it to prevent sticking.
5. Bake the rolls
Preheat the oven to 350°F (180°C).
Bake the rolls for 15–20 minutes, until lightly golden and cooked through. Let them cool in the pan for a few minutes before adding the frosting.
6. Prepare the pistachio cream cheese frosting
In a bowl, mix the cream cheese, pistachio cream, powdered sugar, and vanilla extract until smooth. Add milk a little at a time until the frosting reaches your preferred consistency.
Spread the frosting over the warm rolls so it softens slightly and settles into the swirls.
7. Decorate and serve
Sprinkle ground pistachios over the frosting. Serve the rolls warm while they’re soft and the pistachio filling is fragrant.
Tips for the Best Pistachio Rolls
- Choose a flavorful pistachio cream. Pistachio spreads vary in sweetness and pistachio content. Taste yours before making the filling, and adjust the powdered sugar if needed.
- Don’t add too much flour. The dough should be soft and slightly tacky, not dry. Adding too much flour can make the rolls dense.
- Cut the strips evenly. This helps the rolls bake at the same rate. A pizza cutter or sharp knife works well.
- Don’t overbake. Since these rolls are meant to be soft, start checking them at 15 minutes. Remove them when lightly golden and cooked through.
- Frost while warm, not piping hot. Let the rolls cool for a few minutes before adding the cream cheese frosting. This allows the frosting to soften without melting completely.
- Adjust the frosting consistency. Add milk gradually. Pistachio cream can vary in thickness, so you may need a little more or less.
- Refrigerate leftovers. Because the rolls have cream cheese frosting, store them in an airtight container in the refrigerator for up to 3 days. Let them sit at room temperature briefly before serving, or warm an individual roll gently without overheating the frosting.
