Pistachio Raspberry Semifreddo – Easy No-Churn Frozen Dessert

This Pistachio Raspberry Semifreddo is one of those desserts that looks impressive but is actually quite simple to make. I love the combination of creamy pistachio and bright, slightly tart raspberries. The raspberry sauce cuts through the richness of the semifreddo, while the pistachio adds a lovely nutty flavor and beautiful color.

There is no need for an ice cream maker here. Once the mixture is prepared, everything is layered in a loaf pan and placed in the freezer. The hardest part is simply waiting for it to set!

I made this semifreddo with a creamy pistachio base and raspberry sauce and pistachio spread swirled throughout, so every slice has a little bit of both flavors. The texture is light, creamy, and easy to slice once slightly softened.

This is such a lovely dessert for summer gatherings, when you want something refreshing but still special. You can make it ahead of time, keep it in the freezer, and take it out just before serving. I like to let it sit for a few minutes at room temperature before slicing, then decorate it with fresh raspberries and chopped pistachios.

It is creamy, fruity, nutty, and wonderfully refreshing, a dessert I would happily make again whenever raspberries are in season.

For the pistachio flavor, you can use either store-bought pistachio spread or make your own at home. I often like using homemade pistachio spread because it has such a lovely, fresh pistachio flavor. You can find my recipe for Homemade Pistachio Spread here.

How to make pistachio raspberry semifreddo

Begin with preparing the raspberry sauce. Add the raspberries, sugar, and lemon juice to a small saucepan over medium heat.

Bring the mixture to a boil and cook for about 5-7 minutes, or until the raspberries soften and the sauce thickens slightly.

Remove from the heat and pass the sauce through a fine sieve to remove the seeds. Set aside and let it cool completely.,

Prepare the vanilla pistachio base

Line a 9 × 5-inch (23 × 13 cm) loaf pan with plastic wrap, leaving some overhang for easy removal later.

In a heatproof bowl, whisk together the whole eggs, sugar, salt, and vanilla until combined.

Place the bowl over a bain-marie—a saucepan of gently simmering water. Whisk constantly for about 5–7 minutes, until the mixture becomes pale, thickened, and slightly warm to the touch, reaching about 160–170°F (70–75°C).

Remove from the heat and let the mixture cool to room temperature.

Add ¼ cup (60 g) of pistachio spread and mix until fully combined.

In a separate bowl, whip the cold cream until stiff peaks form. Gently fold the whipped cream into the cooled vanilla pistachio mixture in batches, using light movements to keep the mixture airy.

Layer and freeze the semifreddo

Transfer a little less than one-third of the vanilla pistachio mixture into the prepared loaf pan.

Add spoonfuls of raspberry sauce and small amounts of the remaining pistachio spread here and there. Repeat the layers with more vanilla pistachio mixture, raspberry sauce, and pistachio spread until all the ingredients are used, finishing with a layer of the vanilla pistachio mixture on top.

Cover the pan with plastic wrap and freeze for at least 6 hours, or preferably overnight, until completely set.

When ready to serve, carefully invert the semifreddo onto a serving platter and remove the plastic wrap.

Garnish with fresh raspberries and chopped pistachios, then slice and serve.

Ingredients
  

Semifreddo Pistachio Vanilla Base

  • 3 medium eggs
  • 1/2 cup (100g) sugar
  • 2 tsp (10g) vanilla extract
  • 1/4 tsp (1g) salt
  • 1/4 cup (60g) pistachio spread
  • 2 cups (480g) whipping cream , chilled

Raspberry Sauce

  • 9 oz (250g) raspberries , fresh or frozen
  • 1/4 cup (50g) sugar
  • 1 tbsp (15g) fresh lemon juice

For swirl

  • 1/2 cup (120g) Pistachio spread

Instructions
 

Prepare the raspberry sauce.

  • Place raspberries, sugar and lemon juice in a small saucepan and place over medium heat.
  • Bring to a boil and cook for about 5 minutes or until thickened.
  • Remove from heat and sieve to remove seeds.

  • Mix to combine. It will deflate slightly.

  • In a separate bowl, whip the cold whipping cream until stiff peaks form.
  • Gently fold the whipped cream into the cooled vanilla pistachio mixture in batches.

  • Keep as much air as possible.
  • Transfer a bit less than a third to the prepared pan.

  • Add spoons of raspberry sauce and remaining pistachio spread from place to place.

  • Repeat the layering with more vanilla and pistachio base, raspberry sauce, and pistachio spread.
