    For your mousse cake recipes, how may I replace gelatin with Agar Agar. I’ve heard agar agar mousse does not freeze well, but what is your opinion.? Sincerely appreciate a response. I’ve made many of your dessert recipes and they are stellar, however my expanding family now includes vegetarians who won’t eat gelatin.

      I haven’t tried making my mousse cakes with agar agar. As far as I know, agar agar is used in the same quantity as gelatin powder or a bit less, but it needs to be fully dissolved and brought to a boil to activate properly. I think it should work well as long as you follow the correct method.
