How to Make No-Bake Pistachio Cheesecake

Make the pistachio cookie crust

Crush the digestive biscuits into fine crumbs and combine them with the finely ground toasted pistachios and sugar. Add the melted butter and mix until evenly combined.

Press the mixture firmly into the bottom of a 20 cm (8-inch) springform pan lined with parchment paper. Refrigerate while you prepare the filling.

Prepare the gelatin

Add the gelatin powder to the cold water and let it sit for about 5–10 minutes to bloom.

Make the pistachio cream cheese mixture

Beat the cream cheese with the powdered sugar until smooth and creamy. Add the vanilla extract and pistachio spread and mix until well combined.

If using matcha for color, add a small amount at this stage and mix until evenly incorporated.

Add the gelatin

Gently melt the bloomed gelatin until completely dissolved. Do not let it boil.

Add a few tablespoons of the cream cheese mixture to the melted gelatin and stir well to temper it. Pour the gelatin mixture back into the cream cheese mixture and mix until combined.

Add the whipping cream

Pour the cold whipping cream into the cream cheese and pistachio mixture. Beat until the filling becomes thick and creamy and holds its shape.

Assemble the cheesecake

Pour the filling over the chilled crust and smooth the top with a spatula.

Refrigerate for at least 6 hours, preferably overnight, until completely set.

Decorate and serve

Carefully remove the cheesecake from the springform pan. Decorate with chopped toasted pistachios, fresh raspberries, or a few whole pistachios before serving.

For clean slices, use a sharp knife warmed under hot water and wiped dry between cuts.

Ingredients
  

Cookie Pistachio Crust

  • 6 oz (180g) digestive biscuits or graham crackers
  • 1/2 cup (50g) toasted pistachios
  • 1 tbsp (15g) sugar
  • 6 tbsp (80g) unsalted butter , melted

Pistachio Cream Cheese Filling

  • 21 oz (600g) cream cheese , room temperature
  • 1/4 cup (30g) powdered sugar
  • 2 tsp (10g) vanilla extract
  • 5 oz (150g) pistachio spread
  • 1 cup (240g) whipping cream (35% fat) , chilled
  • 1 ½ tsp (7g) gelatin powder
  • 3 tbsp (45ml) cold water
  • Matcha for color , optional

For Decoration

  • chopped toasted pistachios
  • fresh raspberries

Instructions
 

Prepare the crust.

  • Line the bottom of an 8 inch (20cm) round springform pan with parchment paper, and line the sides with an acetate sheet.
  • Crush the digestive biscuits or graham crackers into fine crumbs.

  • Mix with sugar and toasted pistachios.
  • Add melted butter and mix to combine.

  • Press firmly into the bottom and sides of the springform pan.

  • Bloom the gelatin. Sprinkle the gelatin over the cold water.
