Blueberry and Mango Parfait

Quick easy recipe for a healthy and nutritious breakfast or dessert for summer days. The alternate layers of colorful fruits with yogurt makes this blueberry and mango parfait totally irresistible. If served with homemade granola it's absolutely divine. The best part is that you can never get bored of this as you can always change the fruits and serve a different parfait each time.

  • Makes 2 servings
  • 1 mango, finely sliced
  • 1 1/2 cup fresh blueberries
  • vanilla yogurt
  • homemade granola
  1. To make the parfait, place a layer of blueberries on the bottom, granola then add yogurt. 
  2. Add a layer of mango, granola and then add yogurt again. Repeat the layers until the dish is full. 
  3. Garnish with fresh blueberries, mango slices and granola. Keep in refrigerator until ready to serve.

Those are gorgeous. I'm not a mango fan, but I imagine sliced peaches would work just as well. Fantastic idea. I love those glasses too!

This looks sweet! I bet drizzling a homemade blueberry liqueur over this would be nice. I just made a batch of blueberry liqueur for my blog and it's simple to make.
