How to make tomato puff pastry basil tart
Preheat the oven to 400F (200C). Slice the tomatoes into 1/4 inch (6 mm) slices and place them on paper towels to drain for about 15-20 minutes, covering them with more paper towels.
In a small bowl, combine the cream cheese, Dijon mustard, garlic, basil, and Parmesan cheese.
On a floured surface, roll out the puff pastry dough into a rectangle measuring 12×14 inches (30X35cm). Transfer the rolled-out dough onto a baking sheet lined with parchment paper. Prick the pastry all over with a fork, leaving about 1 inch as a border around the edges.
Spread the cheese mixture thinly over the puff pastry. Sprinkle Mozzarella cheese evenly on top. Arrange the tomato slices on top of the cheese.
Bake for about 20 to 25 minutes until the crust is golden, the cheese is melted, and the tomatoes are cooked. Sprinkle fresh basil on top and serve warm.

Ingredients
- 1 sheet (400 g) puff pastry , thawed
- 4 tbsp (60g) cream cheese
- 1 garlic clove , minced
- 1 tsp Dijon mustard
- 3 tbsp fresh basil , chopped
- 1/4 cup (25g) Parmesan cheese , grated
- 1 cup (100g) Mozzarella cheese , grated
- 4 medium tomatoes , sliced in about 1/4 inch slices
- Freshly ground black pepper

- Spread the cheese mixture on puff pastry on a thin layer. Sprinkle Mozzarella cheese evenly on top.
- Arrange the tomato slices on top.
- Bake for about 20 to 25 minutes until the crust is golden, cheese melted and tomatoes cooked.
- Sprinkle fresh basil on top and serve warm.

Looks wonderful. I think I’ll give it a try. I’m not a fan of Dijon mustard. If I took it out, the tart might end up tasting flat. Is there something else you think would make a flavorful substitute that blends with the rest of the ingredients?
Anything you like.. you can top it with olives..use thyme.. whatever you like best.

Would it be nicer to just cut smaller tomatoes in half and pop them on so they go sun dried almost? Just an idea… I haven’t tried this yet but i will do! What other spices or herbs would you recommend?
