Walnut and Lemon Cake

This Walnut and Lemon Cake is an elegant delicious cake that combines walnuts, lemon, and chocolate,  creating a very flavorful and sophisticated cake. I have this recipe from my mother who usually makes this cake during the holidays. This cake gets rave reviews all the time.

This delightful cake consists of a moist and delicate walnut sponge cake, a lemon crispy layer, and topped with chocolate glaze. I am glad to be able to share the recipe with you all.

How to make Walnut and Lemon Cake

Start by preheating the oven to 180°C (350°F) and preparing a 10-inch (26 cm) springform pan with a removable base. Butter the pan generously and dust it with flour to prevent sticking.

Prepare the walnut sponge cake

To create the walnut sponge cake, begin by creaming together butter and sugar in a large bowl until the mixture is well blended and fluffy. Add finely chopped walnuts, lemon zest, and flour, mixing thoroughly to combine all the ingredients. Separate the egg yolks from the egg whites. Whip the egg whites in a separate bowl until foamy and stiff peaks form, then gently fold them into the butter mixture to maintain the airiness.

Pour the batter into the prepared springform pan and bake for about 15 minutes, or until the top is set and lightly golden.

How to prepare the crispy yolk mixture

While the cake is baking, prepare the yolk mixture by beating the egg yolks with sugar in another bowl until the mixture becomes thick, creamy, and pale yellow in color.

Once the initial baking is done, remove the cake from the oven and carefully pour the yolk mixture over the top. Return the cake to the oven for an additional 15 minutes, allowing the yolk topping to set and become golden.

How to prepare the chocolate glaze

As the cake finishes baking, prepare the chocolate glaze by melting the chocolate over a bain-marie (double boiler) until smooth. Stir in the butter and heavy cream, mixing until the glaze is well blended and glossy.

After removing the cake from the oven, let it cool slightly before pouring the chocolate glaze over the warm cake. Spread the glaze evenly over the top and allow it to set before serving.

This delightful Walnut and Lemon Cake consists of a moist and delicate walnut sponge cake, topped with a lemon crispy layer and chocolate glaze.

Ingredients
  

Cake Base

  • 140 g butter
  • 7 tbsp sugar
  • 4 tbsp flour
  • 6 tbsp ground walnuts
  • 1 lemon finely grated zest
  • 4 egg whites

Yolks Filling

  • 4 egg yolks
  • 7 tbsp powdered sugar

Chocolate Glaze

  • 100 g dark chocolate
  • 1 tbsp butter
  • 2 tbsp heavy cream

Instructions
 

  • Preheat the oven to 180C (350F). Butter a 10-inch(26 cm) springform pan (with a removable base), and dust with flour.  

Prepare the walnut sponge cake.

  • In a large bowl, cream together butter and sugar until well mixed. Add walnuts, lemon zest and flour and mix well. 
  • Separate egg yolks form egg whites. Whip egg whites until foamy and form stiff peaks. Fold in egg whites into butter mixture.
  • Pour the butter mixture into prepared pan and bake for 15 minutes.

Prepare the yolk mixture.

  • Meanwhile, mix egg yolks with sugar until thick, creamy, and pale yellow colored. 
  • Remove the cake from the oven and add the yolk mixture on top of the cake and bake for another 15 minutes.

Prepare the chocolate glaze.

  • Melt the chocolate over a bain-marie until smooth. Stir in butter and heavy cream until well blended.
  • Use immediately, and pour over the cake.
