Dried Fruit Biscotti

I have discovered Italian biscotti recently and I simply love them. Biscotti can be made in so many ways, with nuts, fruits or even chocolate. These homemade crunchy Dried Fruit Biscotti are wonderful alongside the morning hot tea or coffee.

The Biscotti recipe is very interesting. The batter of the biscotti is somehow similar to a cake batter, but thicker in consistency. The batter is shaped into two logs and baked. After they cool, they are cut into slices and baked again until they dry out.

These dried fruit biscotti are made with dried cranberries, plums, apricots and raisins that bring an amazing taste. You can also make them for holiday tables or as homemade gifts. Kids love them too, which is another reason to keep making them.

How to make dried fruit biscotti

Start by preheating your oven to a toasty 180°C (350°F). Line a baking sheet with parchment paper.

In a medium bowl, whip up the butter and sugar until creamy. Toss in the eggs, lemon zest, and vanilla extract, giving it all a good stir. Add baking powder and flour, and blend until well combined. Now, throw in those dry fruits and mix them in.

Pour the dough onto the baking sheet, shaping it into one lengthy log or two smaller logs, each about 2 inches (5cm) wide. The dough’s a bit sticky, so either wet your spatula or dust it with flour to get that perfect form.

Let it bake for 5 minutes. Once done, take it out, and let it chill for around 30 minutes. Now comes the slicing magic – cut it into stylish 1/2-inch diagonal slices and place them back on the baking tray.

Back into the oven, they go for another 15-17 minutes, until they turn golden brown. Your tasty treats are ready to be savored.

Dried fruit biscotti made with dried cranberries, plums, apricots and raisins perfect alongside morning hot tea or coffee or for holiday tables and homemade gifts.

Ingredients
  

  • 1 stick (110g) butter , room temperature
  • 1/2 cup (100g) sugar
  • 2 eggs
  • 1 ½ tsp (6g) baking powder
  • Finely grated zest of 1 lemon
  • 1 tsp (5g) vanilla extract
  • 1 cup mixed dried fruits (cranberries, plums, apricots)
  • 1 ¼ cup (160g) all-purpose flour
  • 1/2 cup (50g) nuts , optional

Instructions
 

  • Preheat oven to 180°C (350°F).Line a baking sheet with parchment paper.
  • In a medium bowl beat butter and sugar until creamy, then add eggs, lemon zest and vanilla extract. Stir well.
  • Add baking powder and flour and mix until well blended. Stir in dry fruits. 
  • Pour the dough into one long log or 2 smaller logs into the prepared baking tray. The logs should be about 2 inches (5cm) wide. The dough is pretty sticky so you can wet your spatula or use flour to be able to give them the right shape.
  • Bake for about 25 minutes, remove from the oven and let cool for about 30 minutes. Cut into 1/2 inch diagonal slices and place them on the baking tray. Bake for another 15-17 minutes until golden brown.

    Those look beautiful; this post just reiednmd me that I have not made biscotti since I was a kid, I think I was twelve. It was Mother’s Day and I wanted to make something really fancy for my mom, so I found a biscotti recipe and filled up a basket with them to surprise her with in the morning (breakfast in bed). Lord only knows if they were any good! How funny that I was not intimidated by such a thing at that age yet have not made biscotti since because I think it must be hard to make them come out well.

    I’ve been on a biscotti kick of late and let me tell you, this is a wonderful recipe.
    Not saying I’m an authority but with a name like “Angelo” and 5 Aunts form Italy always cooking and baking almost every day, I think it’s safe to say I’m a pretty good judge. Thank You! The butter makes it and I use 1/2 brown sugar and 1/2 white. Just a preference of mine.

      If I would try a gluten-free version I would go with oat and almond flour mixture. If I will try it out I will let you know.
