I wanted something chocolatey and satisfying, but made with better-for-you ingredients, and these check all the boxes. They’re naturally gluten-free (thanks to oat flour), made with no refined sugar, and there’s no butter or oil involved. Instead, applesauce keeps them soft and moist while cutting down on fat and calories.

The cottage cheese blends right into the batter, creating a smooth, creamy base and adding a lovely boost of protein without affecting the flavor. What you get is a brownie that’s rich and deeply chocolatey, with a soft, slightly fudgy texture that feels indulgent but is actually much lighter than the classic version.

I also love adding a pinch of instant coffee, it doesn’t make them taste like coffee, it just intensifies the chocolate in the most magical way. These are the kind of brownies I feel really good about making, whether it’s for an everyday treat or something sweet for the family.

How to make cottage cheese brownies

Begin with preheating the oven to 350°F (180°C) and lining an 8 × 8-inch (20 × 20 cm) baking pan with parchment paper.

In a blender or food processor, blend the cottage cheese, applesauce, honey, eggs, salt, instant coffee powder and vanilla extract until completely smooth and creamy.

Whisk in the oat flour and cocoa powder, being careful not to overmix. If using chocolate chips or nuts, fold them in at this stage.

Pour the batter into the prepared pan and spread it evenly. Top with some more chocolate chips if desired. Bake for 20–22 minutes, or until a toothpick inserted in the center comes out mostly clean, with a few moist crumbs remaining, this ensures a soft, fudgy texture.

Allow the brownies to cool completely in the pan before slicing into squares. As they rest, the texture sets beautifully, becoming rich and tender, with a deep chocolate flavor that feels indulgent yet perfectly balanced.

Ingredients
  

  • 1 cup (240g) cottage cheese
  • 1/3 cup (80g) unsweetened applesauce
  • 3 tbsp (60g) honey or maple syrup
  • 2 large eggs
  • 1 tsp (5g) vanilla extract
  • 1/2 tsp (1g) instant coffee powder
  • 1/2 cup (50g) oat flour
  • 1/2 cup (60g) unsweetened cocoa powder
  • 1/4 tsp (1g) salt
  • 1/4 cup (30g) dark chocolate chips

Instructions
 

  • Preheat the oven to 350°F (180°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  • Put the cottage cheese in a blender or food processor.

  • Blend again until smooth.
