How to make cottage cheese chocolate chip cookies

Place the cottage cheese in a blender or food processor and blend until completely smooth. Transfer it to a mixing bowl. Add the honey (or maple syrup), egg, and vanilla extract, and whisk until the mixture is silky and well combined.
Add the flour, oat flour, baking powder, and salt, and stir gently until just combined, being careful not to overmix. Fold in the chocolate chips until evenly distributed.
Use a spoon or cookie scoop to drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches (5 cm) apart. Lightly flatten each cookie with the back of the scoop or your fingers, as the dough does not spread as much as traditional cookie dough.
Bake for 13–15 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

- 1 cup (125g) all‑purpose flour
- 3/4 cup (75g) oat flour
- 1/2 tsp (2g) baking powder
- 1/4 tsp (1g) salt
- 1/3 cup (60g) mini chocolate chips
Instructions
- Preheat the oven to 350 °F (180 °C) and line a baking sheet with parchment paper.
- Put the cottage cheese in a blender or food processor.
- Blend until smooth and transfer it into a bowl.
- Add honey (or maple syrup), egg, and vanilla.
- Whisk until smooth.
- Add the flour, oat flour, baking powder, and salt.
- Stir gently until just combined. Don’t overmix.
- Fold in the chocolate chips.
- Use a spoon or cookie scoop to drop rounded portions of dough onto your prepared baking sheet.
- Place the cookies about 2″ (5cm) apart.
- Flatten gently with the back of the scoop or your fingers, as these don’t spread as much as traditional cookies.
- Bake for 13–15 minutes or until the edges are just lightly golden.
- Let cookies cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
