- 1 ¾ cups (220g) all-purpose flour
- 1 tsp (6g) baking soda
- 1/2 tsp (2g) salt
- 10 oz (300g) ripe bananas , about 3 medium bananas
- 1/2 cup (100g) sugar
- 2 large eggs
- 1/2 cup (110ml) vegetable oil
- 1 tsp (5g) vanilla extract
- 1 cup (180g) semisweet chocolate chips
- Preheat the oven to 375F (190C). Line a 12-cavity muffin pan with paper liners.
- In a medium bowl mash the bananas using a fork.
- In a medium bowl whisk together flour with baking soda, and salt.
- In a large bowl add sugar and eggs and mix to combine.
- Add vanilla extract and mix to combine.
- Gradually incorporate the oil. Add the mashed bananas and mix to combine.
- Incorporate the flour mixture. Gently fold in the chocolate chips. Don’t overmix the batter.
- Divide the batter equally into muffin cups.
- Bake for 18-20 minutes until golden.
- While still warm, top with more chocolate chips. Enjoy!
