Homemade Cheese Flatbreads

These homemade Cheese Flatbreads are a delightful treat made with a soft yeast dough and filled with a savory mixture of cheese, dill, and green onion. Perfectly golden and crispy on the outside, yet soft and flavorful on the inside, these flatbreads are a delicious snack or appetizer.

I usually make these cheese flatbreads and use in various savory meals like in this Sautéed Brussels Sprouts recipe. They can be served in various ways, with different savory fillings, as an appetizer or simply with a warm stew or as a snack.

The flatbreads are really tasty, the cheese, green onion and dill together makes them totally irresistible.

How to make Cheese Flatbreads

Begin by preparing the dough. In a large bowl, mix flour with salt and sugar. Dissolve the fresh yeast in warm milk and add to the flour mixture. Add the eggs, the rest of the milk, and butter or oil, then mix everything together. Incorporate the cheese, onion, and dill using your hands, and knead until the dough is smooth.

Cover the bowl with plastic wrap and let the dough sit for about 1 hour at room temperature, allowing it to rise until nearly doubled in size.

Once the dough has risen, it’s time to bake the flatbreads. Punch the dough down, knead it briefly, and divide it into 12-14 equal pieces. Roll out each piece into a circle about 8 inches (20 cm) in diameter and 1/7-inch (3-4 mm) thick.

Preheat a large non-stick pan over medium heat and add a small amount of oil. Cook the flatbreads one at a time, turning them over when the first side is brown but still soft. Continue cooking until both sides are nicely browned and the flatbreads are cooked through.

Ingredients
  

  • 4 cups (500g) flour
  • 25 g fresh yeast (2 1/4 tsp active dry yeast)
  • 2 eggs
  • 1 tbsp (15) sugar
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) warm milk
  • 2 tbsp (30g) melted butter or vegetable oil
  • 7 oz (200 g) cheese , like cheddar, sheep cheese
  • 1 tbsp fresh dill , chopped
  • 1 bunch green onion , chopped

Instructions
 

Prepare the dough.

  • In a large bowl, mix flour with salt and sugar. Dissolve the fresh yeast in warm milk and add to the flour mixture. Add eggs and rest of the milk and butter or oil and mix everything.
  • Incorporate the cheese onion and dill using your hands, and knead until smooth.
  • Cover it and let it sit for about 1 hour at room temperature, to let the dough rise until nearly doubled in size.

How to bake the flatbreads.

  • Punch the dough down, knead, and cut into 12-14 equal pieces. Roll out each one to a circle about 8 inches (20 cm) in diameter and 1/7-inch (3 -4mm) thick.
  • Preheat a large non-stick pan. Put a little bit of oil in the pan. Cook the flatbreads on both sides until the dough is brown but still soft.
