Mushroom Pizza with Thin Crispy Crust

I don’t know about you, but when I enjoy a slice of pizza, I prefer it to maintain its shape without bending under the weight of excessive toppings. Every pizza I’ve had in the cities of Italy where I’ve traveled has been perfectly balanced, with just the right amount of toppings and a sturdy crust. This Mushroom Pizza recipe features a thin and crispy crust, a generous portion of mushrooms, and a blend of spices that transform it into a delightful Italian pizza.

For an even better experience, I recommend preparing your tomato sauce. Homemade pizza sauce surpasses any store-bought version by far.

How to make this mushroom pizza

Begin by preparing the pizza dough. In a large bowl, mix flour with salt and sugar. Dissolve the fresh yeast in warm water and add it to the flour mixture along with oil. Mix everything until combined, then knead the dough with your hands or mixer until it becomes smooth. Cover the bowl with a clean kitchen towel and let the dough rise for about 1 hour at room temperature, until it doubles in size.

While the dough is rising, prepare the tomato sauce. In a medium saucepan, heat oil over medium-low heat. Add garlic and cook for a few seconds, then stir in paprika and pureed tomatoes. Add sugar, basil, oregano, bay leaf, salt, and pepper. Bring the sauce to a simmer, then lower the heat, cover the saucepan, and cook for about 10 minutes or until the sauce reaches the desired spreading consistency for your pizza. Remove from heat and let cool slightly before using.

Preheat the oven to 400°F (200°C). Punch the risen dough down and knead it briefly. Split the dough into 2 pieces and shape each piece into a ball. Roll out each ball into a circle about 12 inches (30 cm) in diameter. Place the rolled-out dough on a greased pizza pan and use a fork to punch holes in the dough to prevent air bubbles.

Spread the tomato sauce evenly over the dough, leaving a small border around the edges. Sprinkle oregano and basil over the sauce. Spread the mushrooms, olives, and corn kernels over the pizza, then sprinkle grated mozzarella cheese on top.

Place the pizza in the preheated oven, switching to the heat coming from the bottom if possible, and bake for 15-20 minutes, or until the cheese has melted and the edges of the crust are golden brown.

Amazing Italian mushroom pizza recipe with a thin and crispy crust, homemade tomato sauce, right amount of mushrooms and a combination of Italian spices.

Ingredients
  

Crust

  • 3 cups (375g) bread flour
  • 25 g fresh yeast
  • 1 cup (240ml) warm water
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1/3 cup (70g) oil

Pizza Filling

  • 2 medium champignon mushrooms , sliced
  • 6 black olives , seeded and sliced
  • 1/4 cup corn kernels
  • 1 cup (100g) Mozzarella cheese , grated

Tomato Sauce (Homemade Ketchup)

  • 3,4 fresh tomatoes , peeled (or 400 g can Italian plum tomatoes- pomodori pelati)
  • 1 tbsp olive oil
  • 1 garlic cloves , peeled and crushed
  • 1 tsp sugar
  • 1 bay leaf
  • 1 tsp dry oregano
  • 1 tsp dry basil
  • 1/2 tsp paprika
  • sea salt and freshly ground black pepper

Instructions
 

Prepare the dough.

  • In a large bowl, mix flour with salt and sugar. Dissolve the fresh yeast in warm water and add to the flour mixture. Add oil and mix everything. Using your hands, knead until smooth. Cover it and let it sit for about 1 hour at room temperature, to let the dough rise until doubled in size.

Prepare the tomato sauce.

  • In a medium saucepan heat oil over medium-low heat. Add garlic, cook a few seconds then stir in paprika and pureed tomatoes. Add sugar, basil, oregano, bay leaf salt and pepper. Bring to a simmer, lower heat, and cover. Cook for about 10 minutes or until it has the right consistency for spreading on your pizza. When done, remove from heat and let cool slightly before using on your pizza. 
  • Preheat the oven to 400°F (200°C). Punch the dough down, knead, split in 2 pieces. Shape each piece into a ball, then roll out into a circle about 12 inches (30 cm) in diameter. Place it in greased pizza pan and punch some holes in the dough with a fork.
  • Spread tomato sauce over the dough and sprinkle with oregano and basil. Spread the mushrooms, olives and corn kernels over dough and sprinkle mozzarella on top. 
  • Place in the preheated oven, switch for heat coming from down and bake for 15-20 minutes, until the cheese has melted and edges of crust are golden brown.
