With the hot weather still holding sway, I decided to whip up one of my all-time favorite ice cream recipes, sweetened condensed milk ice cream. This time, I opted for an Apricot Ice Cream variation, using homemade apricot jam instead of fresh apricots to intensify the fruit’s flavor.

This summer, I’ve found myself making more ice cream than ever before. My daughters, who are growing up fast, constantly request their favorite recipes, and ice cream is always at the top of their list. And really, who can blame them? There’s something truly special about indulging in a creamy, preservative-free treat that’s both fresh and refreshing.

For an extra burst of flavor, I recommend serving the ice cream with fresh apricot slices as it’s simply divine. If you’re a fan of fruit ice creams, this apricot variation is sure to become a new favorite.

How to make apricot ice cream with sweetened condensed milk

Begin by whipping the heavy cream in a large bowl using an electric mixer until stiff peaks form.

Next, add the sweetened condensed milk and vanilla extract to the whipped cream and mix for a couple of minutes more until well combined.

To assemble the ice cream, start by adding a layer of the cream mixture to your storage container. Then, add a layer of apricot jam and gently stir to create some swirls. Repeat these steps until all of the cream mixture and jam are used up.

Allow the ice cream to freeze for at least 4 hours or overnight until it’s firm. Once frozen, your delicious apricot swirl ice cream is ready to enjoy!

Apricot ice cream made with sweetened condensed milk and apricot jam. Easy, quick, no churn ice cream perfect for summer. No machine involved.

Ingredients
  

  • 1 can (14 oz, 397g) sweetened condensed milk
  • 2 1/2 cups (600 ml) heavy cream
  • 1 tsp vanilla extract
  • 1 cup apricot jam

Instructions
 

  • In a large bowl whip the heavy cream with an electric mixer until stiff peaks form.
  • Add sweetened condensed milk and vanilla extract and mix for a couple of minutes more.
  • Add a layer of cream mixture. Add a layer of apricot jam and stir gently just to create some swirls. Repeat steps until all cream mixture and jam is done.
  • Transfer in one large or 2 smaller covered storage container and place in the freezer. Freeze for at least 4 hours or overnight.

    Never having made ice cream, I used 500 gms of full fat creme fraiche and a jar of homemade apricot jam (around 250gms). mixed them together then put it in an ice cream maker. Delicious and not too sweet.
