How to make broccoli and prosciutto pasta
To cook broccoli, start by bringing a large pot of water to a boil. Add a teaspoon of salt, then add the broccoli florets and cook them until they’re just tender, which should take about 1-2 minutes. Remove the florets and place them in a bowl of ice water to stop them from cooking further.
Next, bring the water back to a boil and cook the pasta until it reaches the al dente stage. Once done, drain the pasta, making sure to reserve some of the cooking water in case you need it later.
Now, cut the prosciutto into strips about 1/4 inch thick. Heat some oil in a pan over medium-high heat, then add the prosciutto and cook it for a couple of minutes. Add the broccoli and cream to the pan and give it a good stir.
Add the drained pasta to the pan, and if the mixture seems too dry, you can add some of the reserved cooking water to reach your desired consistency. Season everything with salt and pepper to taste.
Finally, serve the dish immediately, with slices of Parmesan cheese on top.
