Cherry Chocolate Cake with Cream Cheese Frosting

I love the simplicity of this Cherry Chocolate Layer Cake. It is not fancy at all, so there is no need to worry about decoration…simply add layers of cake between your favorite frosting and voila.. the assembling is done in a matter of minutes.

This dessert is really amazing, consisting of three chocolate cake layers, soaked in syrup and filled with a delightful cream cheese frosting.

The “cherries on top of the cake” make this cake simply divine. I simply love how easy this dessert is to prepare, and I hope you’ll try this recipe. I’m sure you’ll love it as much as we did.

How to make this chocolate cherry layer cake

Start by preheating the oven to 375°F (180°C) and greasing three 7-inch round pans with butter. Line the bottoms with rounds of parchment paper.

How to make chocolate sponge cake layers

Separate the egg whites from the yolks and add water to the egg whites. Whip the whites until foamy with a mixer and gradually add the sugar, whipping the whole time until it holds very stiff peaks. In a separate bowl, mix the egg yolks with baking powder. Fold the yolk mixture into the egg whites. Using a metal spoon, lightly fold in the cocoa powder and flour until well combined.

Divide the mixture between the three pans and bake for 20-25 minutes. Run a sharp knife completely around the inside edge of the pans, remove the parchment paper, and let the layers cool completely at room temperature on a rack.

How to prepare the cherry syrup

To make the syrup, combine the pureed cherries with sugar and water.  Bring the mixture to a boil, and let it simmer for 5 minutes before removing it from the heat. The result is a thick syrup. Let it cool completely.

How to prepare the cream cheese frosting

Prepare the frosting by combining all ingredients, Mascarpone, cream cheese, sugar, vanilla extract and cherry syrup in a medium bowl and mixing until smooth.

When the cake layers are cool enough, punch them with a toothpick in several places. Add 3 tablespoons of syrup to the surface of each layer and allow the syrup to moisten the layers.

Split the frosting into three portions and assemble the cake by spreading the frosting between each layer.  Garnish with cherries on top and the cake is ready.

This Cherry Chocolate Cake with Cream Cheese Frosting is really amazing, consisting of three chocolate cake layers, soaked in cherry syrup and filled with a delightful cream cheese frosting.

Ingredients
  

Cake Layers

  • 6 eggs
  • 3 tbsp (45ml) cold water
  • 12 tbsp (180g) sugar
  • 1 tsp (4g) baking powder
  • 1/2 cup (60g) unsweetened dark cocoa powder
  • 3 tbsp (30g) flour

Cherry Syrup

  • 1 cup (150g) cherries , seeded and puree
  • 2 tbsp (30g) sugar
  • 1/4 cup (60ml) water

Cream Cheese Frosting

  • 9 oz (250g) Mascarpone
  • 9 oz (250g) light cream cheese
  • 3 tbsp (45g) sugar
  • 1/2 tsp (3g) vanilla extract
  • 2 tbsp (30g) cherry syrup

Garnish

  • 1 cup (150g) cherries , seeded

Instructions
 

Prepare the cake layers

  • Preheat oven to 375 F (180 C) and grease 3 (7-inch, 18 cm) round pans dishes with butter. Line the bottoms with rounds of parchment paper.
  • Separate egg whites from the yolks and add water to egg whites. Whip whites until foamy with a mixer and gradually add the sugar whipping the whole time until it holds very stiff peaks. In a separate bowl mix egg yolks with baking powder. Fold yolks mixture into egg whites. Using a metal spoon, lightly fold in the cocoa powder and flour until combined well. Divide mixture between the 3 pans and bake for 20-25 minutes. 
  • Run a sharp knife completely around the inside edge of the pans. Remove parchment paper and let them cool completely at room temperature on a rack.

    Cherries are my favourite fruit. This is really making my mouth water, as it’s Winter here, and cherries (which are always crazily over-priced) are nowhere to be found for the next 6 months!

    Other than the obvious luscious colour they give the cake, the rustic appeal they add is divine!
