If you love strawberry and lemon combinations you are at the right place. These No-Yeast Eggless Strawberry Rolls with Lemon Cream Cheese Icing are a great summer treat that everybody will adore. They look simply amazing and totally irresistible. The recipe is really easy and quick, and doesn’t require yeast or eggs.
As for the lemon flavor, it is the lemon zest that brings an amazing lemony and refreshing flavor to these rolls. There is lemon zest in the dough and in the cream cheese icing as well.
The rolls are filled not only with strawberry jam but with diced fresh strawberries too, that also bring a nice flavor and texture.
How to make No-Yeast Eggless Strawberry Rolls
For these rolls, you need to prepare a strawberry jam first. You can make it days in advance or simply use store-bought strawberry jam if you are in a hurry. The next step is to cut the remaining strawberries into small pieces.
Now you can prepare the dough which takes no more than 10 minutes. In less than 15 minutes your rolls can be ready and ready to go into the oven. The dough is easy to work with, not too sticky, and easy to roll out.
For the dough, whisk together the sugar with lemon zest to release oil. Add flour, baking powder, baking soda and salt. Add plain yogurt, melted butter and milk and mix to combine. Knead for a few minutes until the dough is smooth and pulls away from the sides of the bowl.
On a floured surface roll the dough into a 12×14 inch (30x35cm) rectangle. Spread strawberry jam leaving a 1 inch (2 cm) border. Spread the chopped strawberries.
Roll the dough and cut into 8 equal size rolls. Place the rolls on the prepared pan with distance between them. Bake the rolls for about 20-25 minutes until lightly browned.
In a medium bowl mix cream cheese with powdered sugar, lemon zest and vanilla and spread on top of the rolls.

No-Yeast Eggless Strawberry Rolls with Cream Cheese Lemon Icing
Ingredients
For the Dough
- 2 ½ cups (310g) all-purpose flour
- 1 ½ tsp (6g) baking powder
- 1/2 tsp (3g) baking soda
- 2 tbsp (30g) sugar
- 3/4 tsp (3g) salt
- 1/4 cup (60ml) milk
- 3/4 cup (180g) plain yogurt
- 4 tbsp (56g) unsalted butter , melted
- 1 tsp (5g) vanilla extract
- lemon zest of a lemon , about 1 tsp (5g)
For the Strawberry Filling
- 10 oz (300g) fresh or frozen strawberries , cut into smaller pieces
- 1/4 cup (50g) sugar
- 2 tbsp (30ml) lemon juice
- 4 oz (120g) fresh strawberries , cut into small pieces
Cream Cheese Lemon Icing
- 7 oz (200g) cream cheese
- 1/2 cup (60g) powdered sugar
- 1 tsp (5g) vanilla extract
- lemon zest of a lemon , about 1 tsp (5g)
Instructions
First prepare the strawberry jam.
- The jam can also be made a day or two day in advance, to save time. Refrigerate until ready to use. In a small saucepan put the 10 oz (300g) strawberries, sugar and lemon juice. Bring to a simmer, stirring occasionally. Simmer until the mixture is thick, for about 15-20 minutes. Remove from heat and let cool completely before using.
- Cut the 4 oz (120g) fresh strawberries into small pieces.
- Preheat the oven to 375°F (190°C) and grease a 10 inch (25cm) round pan with butter.
Prepare the dough.
- In a large bowl whisk together the sugar with lemon zest to release oil. Add flour, baking powder, baking soda and salt. Whisk to combine.
- Add plain yogurt, melted butter and milk and mix to combine. Knead for a few minutes until the dough is smooth and pulls away from the sides of the bowl.
- On a floured surface roll the dough into a 12×14 inch (30x35cm) rectangle. Spread strawberry jam leaving a 1 inch (2 cm) border. Spread the strawberries pieces.
- Roll the dough and cut into 8 equal size rolls. Place the rolls on the prepared pan with distance between them.
- Bake the rolls for about 20-25 minutes until lightly browned.
Prepare the cream cheese lemon icing.
- In a medium bowl mix cream cheese with powdered sugar, lemon zest and vanilla.
- Spread the cream cheese lemon icing over the warm strawberry rolls. Enjoy!
