Potato Cake

This Potato Cake is a dish I frequently make for my family, whether for lunch or dinner. As mentioned in an earlier post, I aim to share a few simple potato recipes that everyone can easily prepare.

This potato cake is not only delicious but also healthy, making it a favorite among children. You have the option to omit the onion if you prefer, or substitute it with garlic for a different flavor profile. The cake features a delightful contrast in texture, with a crispy top and bottom while maintaining a soft interior.

There are countless variations you can try with this potato dish. For instance, you can add beaten egg, similar to the Spanish Tortilla de Patatas, along with cheese, bacon, smoked fish, or leftover cooked vegetables. The versatility of this dish means you can get creative and experiment with different ingredients to suit your taste. No matter how you choose to make it, I’m sure it will be delicious.

How to make potato cake

Start by washing the potatoes and boil them with their skin on for about 10 minutes, adding a little salt to the boiling water. Remove from the water and set aside to cool. Once chilled, peel and grate the potatoes using a grater with large holes.

Heat the oil in a large frying pan over medium heat. Sauté the onion for about 3 minutes until soft. Add the grated potatoes to the pan and stir with the onion. Season with salt and pepper. Press down the potatoes with a spatula and cook for about 5 minutes or until nicely browned underneath.

Turn the cake by inverting it onto a large plate. Gently slide it back into the pan to cook the other side too. Continue cooking for another 5 to 10 minutes until golden brown and crisp.

Cut the potato cake into slices, and enjoy alongside a fresh salad.

Ingredients
  

  • 3 or 4 potatoes
  • 1 onion , chopped
  • 4 tbsp oil
  • salt and freshly ground black pepper

Instructions

    Growing up my mom always made potato cakes for breakfast from leftover mashed potatoes. I really like this idea! Don’t need leftovers and it looks so easy! I can think of all kinds of other ingredients that might be worth a try too! Thanks for sharing!
