The recipe starts with roasting whole garlic heads until soft and caramelized, bringing out their rich, mellow sweetness. While the garlic is roasting, start preparing the base of the soup, using basic ingredients loke onion, garlic, dried herbs, potatoes and vegetable stock.

When the potatoes are tender, add the roasted garlic and blend together with the soup. Add a splash of cream for extra silkiness, making each spoonful velvety and satisfying.

Serve with crunchy croutons on top, fresh herbs and Parmesan slices for the perfect balance of cozy and delicious.

How to make roasted garlic cream soup

Begin by preheating your oven to 400°F (200°C).

Prepare the roasted garlic by cutting off the tops of the garlic heads to expose the cloves. Place each head on a piece of foil, cut side up, drizzle with olive oil, and wrap tightly in the foil. Roast for 45 minutes, or until the cloves are soft and caramelized.

Meanwhile, start the soup. Heat olive oil in a medium-sized soup pot over medium-high heat. Add the chopped onion and sauté for about 5 minutes until softened.

Next, stir in the minced garlic and cook for 1 minute, then add the potatoes, basil, thyme, and oregano. Stir briefly to combine.

Add the stock (vegetable or chicken) to the pot, along with a pinch of salt and pepper. Cover the pot and bring to a simmer. Lower the heat and cook for 15–20 minutes, or until the potatoes are tender.

Once the garlic is roasted, let it cool slightly. Squeeze the softened garlic cloves out of their skins directly into the soup pot.

Blend the soup using an immersion blender or a countertop blender until smooth and creamy.

Finish by stirring in the cream and tasting for seasoning. Add more salt and pepper if needed.

Serve the soup warm, garnished with bread croutons, Parmesan slices, and fresh herbs.
