These Pistachio Cranberry White Chocolate Truffles are honestly one of my favorite easy Christmas treats ever. They take just a few minutes to make, no baking, no fuss, just melt the chocolate, stir everything together, roll, and chill. That’s it. And they taste so good.

The creamy white chocolate mixed with crunchy pistachios and chewy cranberries is pure holiday happiness in one little bite. They’re sweet, a little tangy, and perfectly festive with those pretty red-and-green colors. They even look like tiny Christmas ornaments without you doing anything fancy.

What I love most is how simple they are. You can make a batch with the kids, they can help roll them, and the whole kitchen suddenly feels cozy and festive. They’re great for gifting, adding to cookie boxes, or sneaking from the fridge when you just want something sweet.

If you need a quick Christmas dessert that tastes amazing and looks adorable, these truffles never disappoint. They’re the kind of treat you make once, and then keep making every Christmas because everyone asks for them again.

How to make Pistachio Cranberry White Chocolate Truffles

Begin with melting the chocolate and cream in a bain-marie over low heat, stirring continuously until the chocolate is nearly melted. Add the butter and keep stirring until the mixture becomes smooth. Remove from heat and stir in the vanilla extract and salt.

Next, fold in the pistachios and cranberries, then let the mixture cool. Cover and refrigerate for 2–3 hours, or until it becomes firm enough to roll. Give it a stir once or twice as it chills.

Once firm, use a teaspoon to scoop and roll the mixture into small balls. Roll each truffle in chopped pistachios to coat.

Serve immediately or refrigerate until ready to enjoy. They keep well in an airtight container in the fridge for up to 2 weeks.

Hope you will try this easy Pistachio Cranberry White Chocolate Truffles and enjoy them as much as we did. If you do, make sure to share the photos with me on Instagram. Would love to see how they turn out for you.
