These Strawberry Oat Crumble Bars are the perfect treat for spring and summer, with a buttery crust, soft strawberry filling inside and a crunchy crumble on top. These bars are a great way to make a quick and easy strawberry dessert that everybody will enjoy.
I used oats in the crust and crumble on top, for a healthier snack, but if for some reason you want to leave them out simply replace the amount of oats with flour.
These Strawberry Oat Crumble Bars can be served chilled or warm with a big scoop of ice cream if desired. You can change to various fruits during the summer time, like cherries, any type of berries and recreate this amazing dessert with various flavors.
How to make Strawberry Oat Crumble Bars
Begin by preheating your oven to 350°F (180°C). Lightly grease an 8×8 inch (20x20cm) square pan and line it with parchment paper, ensuring that some edges are longer to facilitate lifting the dessert once it’s set.
In a bowl, combine the flour, oats, brown sugar, baking powder, and salt. Add the butter and vanilla extract, then stir until the mixture is combined and crumbly. Set aside about 1 cup of this mixture.
Press the remaining crumb mixture into the bottom of the prepared pan to form the crust.
Next, cut the strawberries into small pieces and place them in a bowl. Add the sugar, lemon zest, and cornstarch, and toss the strawberries until they are evenly coated. Spread the strawberry mixture over the crust in the pan.
Sprinkle the reserved cup of crumb mixture evenly over the strawberries.
Bake the dessert in the preheated oven for 30-40 minutes, or until it is lightly browned.
Once baked, allow the dessert to cool completely in the pan. Once cooled, use the parchment paper edges to lift the dessert out of the pan.
