Garlic Cheese Rolls with Roasted Garlic Butter

There is something incredibly comforting about warm, freshly baked Garlic Cheese Rolls coming out of the oven. The smell alone, buttery, garlicky, slightly cheesy, fills the whole kitchen and instantly makes everyone wander in to see what’s baking.

These rolls are soft and fluffy, just like classic cinnamon rolls, but with a savory twist. Instead of sugar and spice, each swirl is layered with creamy garlic butter and plenty of melted cheese. I love using roasted garlic because it gives a deeper, slightly sweet flavor that isn’t harsh at all, just warm and rich. As they bake, the cheese melts into every layer, creating those irresistible pull-apart spirals.

They’re perfect alongside soups, salads, or a cozy family dinner, but honestly, we often eat them straight from the pan while they’re still warm. A little extra brush of melted butter and herbs on top makes them even more special.

What I love most about these Garlic Cheese Rolls is how simple they are. The dough is soft and easy to work with, and the final result feels bakery-worthy without being complicated. They’re the kind of recipe you’ll make once, and then keep making again and again.

How to make garlic cheese rolls

Begin by roasting the garlic. Take 1–3 whole heads of garlic and slice off the top to expose the cloves. Drizzle generously with olive oil, then wrap the heads loosely in foil. Roast at 375°F (190°C) for 35–45 minutes, until the cloves are soft, golden, and fragrant. Set aside to cool slightly.

How to prepare the dough

In a large bowl, combine the yeast, sugar, and ¼ cup of the milk. Let the mixture rest for 5–10 minutes until the yeast becomes foamy and activated.

Add the remaining milk, water, eggs, flour, and salt. Stir until the dough comes together, then knead for about 5 minutes. Add the butter and continue kneading until the dough becomes soft, smooth, and begins to pull away from the sides of the bowl.

Cover the bowl with plastic wrap and let the dough rest for about 15 minutes.

Meanwhile, prepare the roasted garlic butter filling

In a bowl, combine the softened butter, parsley, and salt. Squeeze the soft roasted garlic cloves out of their skins into the bowl and mash them into the butter mixture. Stir until well combined and creamy.

Shape the rolls

Transfer the dough onto a lightly floured or oiled work surface. Roll it into a rectangle about 12×18 inches (30×48 cm). Spread the roasted garlic butter mixture evenly over the surface of the dough, then sprinkle the grated cheese over the top.

Cut the dough into 12 equal strips and roll each strip up tightly.

Place the rolls onto a parchment paper-lined 9×13-inch (23×33 cm) baking tray, leaving about 1 inch (2 cm) of space between them so they have room to rise.

Cover loosely with plastic wrap and let the rolls rise in a warm place for about 1 to 1½ hours, or until doubled in size.

Preheat the oven to 350°F (180°C). Brush the risen rolls with beaten egg and sprinkle grated Parmesan over the tops.

Bake for 20–25 minutes, or until the rolls are golden brown and fragrant.

While the rolls are baking, prepare the finishing butter.
Melt the butter in a small saucepan, add garlic, parsley, and a pinch of salt, and cook for about 1 minute until aromatic. Remove from heat.

Brush the warm rolls generously with the garlic butter mixture. Serve warm and enjoy!

Ingredients
  

For the Dough

  • 4 cups (500g) all-purpose flour
  • 2 ¼ tsp (7g) active dry yeast , or 25g fresh yeast
  • 1 tsp (5g) sugar
  • 1 tsp (5g) salt
  • 1/3 cup (80ml) water , warm
  • 3/4 cup (180ml) milk , warm
  • 2 medium eggs
  • 1/4 cup (60g) butter , softened

For Garlic Cheese Filling

  • 2-3 heads of garlic , to roast in the oven
  • 1/3 cup (80g) butter , softened
  • 2 tbsp fresh parsley
  • 1/2 tsp (3g) salt
  • 1 ½ cup (150g) cheddar or mozzarella cheese , grated

For Topping

For brushing the tops after baking
