Cheese Muffins

- Makes 12 muffins
- 1 1/2 cups (190g) flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups (200g) grated cheese (cheddar is good)
- 1/2 cup (120 ml) milk
- 1/2 cup (120 g) yogurt
- 1 egg, beaten
- 1/4 cup (60g) butter, melted
- Freshly ground black pepper
- Paprika and grated cheese to sprinkle on top

Preheat the oven to 375°F (190°C). Butter and dust with flour a muffin tray or line with paper cups.
- In a bowl, whisk together the dry ingredients, flour, baking powder, salt and sugar.
- Stir in the cheese and black pepper.

In another bowl mix the yogurt with milk, egg and melted butter.
- Fold the liquid into the flour mixture.

Spoon mixture into the muffin cups. Sprinkle paprika and grated cheese on tops.

Bake for about 20-25 minutes until golden brown.

Thank you Holy for your comment. I am glad you like these muffins and I am sorry they stuck to muffins paper cups. I rarely use paper cups but I am glad you warned us about this :) this cheese batter is very delicate and as the cheese melts while in the oven it probably sticks to paper cups. Sometimes the old methods are better.. like dusting the muffin tray before adding the batter :)

I am so glad you enjoyed the recipe.. hope you will try some other recipes too.. I usually use all purpose flour for cakes (type 480 or type 550) For bread I use bread flour (type 650)

Maybe they will turn just fine if you don't add the egg at all.. and if necessary reduce the amount of flour

maybe add buttermilk or simply milk

I found this.. maybe it will help you: To replace 1 egg: 2 tablespoon flour + 1/2 teaspoon oil + 1/2 teaspoon baking powder + 2 tablespoons liquid (milk, cream, buttermilk, diluted yogurt, or dairy free alternatives like coconut milk, soy milk, etc) beaten together until smooth.
