Ingredients
- 7 oz (200g) cottage cheese
- 1 cup (25g) fresh baby spinach
- 2 tbsp (30g) Greek yogurt
- 1 small garlic clove
- 1 tbsp (14g) olive oil
- 1 tsp (5g) lemon juice
- chili flakes , optional
- Salt and freshly ground black pepper
Instructions
- Add the cottage cheese to a blender or food processor.
- Add baby spinach.
- Add the garlic, yogurt/sour cream (if using), salt, pepper, lemon juice and a pinch of chili flakes.
- Add olive oil.
- Blend until smooth and creamy. Stop and scrape down the sides if needed.
- Taste and adjust seasoning.
- Chill it for 15–20 minutes if you can, it helps the flavors come together nicely. Top with some olive oil, seeds chili flakes and chopped spinach.
