I love serving it chilled straight from the fridge, sometimes with whipped cream, fresh berries, or a few crushed cookies on top for extra texture. It’s light and refreshing, yet still cozy and comforting at the same time.

How to make lemon pudding

Begin with adding the sugar and lemon zest to a saucepan. Rub the zest into the sugar until fragrant and slightly moist. This helps release the lemon oils and gives the pudding a brighter citrus flavor.

Whisk in the egg yolks until the mixture becomes smooth and pale. Add the cornstarch and salt, whisking well until fully combined and free of lumps.

Gradually pour in the cold milk, whisking constantly to keep the mixture silky and smooth. Stir in the lemon juice until fully incorporated. Add a pinch of turmeric if desired to enhance the color.

Cook until thickened

Place the saucepan over medium heat and cook, stirring constantly without stopping, until the pudding thickens and begins to bubble gently.

Remove from the heat and stir in a small knob of butter for extra richness and a velvety finish.

For an ultra-smooth texture, strain the pudding through a fine sieve if desired. Cover with plastic wrap pressed directly onto the surface to prevent a skin from forming, then chill for at least 2 hours.

Ingredients
  

  • 2 cups (500ml) milk
  • 1/2 cup (100g) sugar
  • 3 egg yolks
  • 1/3 cup (40g) cornstarch
  • Pinch of salt
  • pinch of turmeric , optional
  • Zest of 2 lemons
  • 1/2 cup (120ml) fresh lemon juice
  • 1 tbsp (15g) butter

Instructions
 

  • In a saucepan, add the lemon zest and sugar.
