This Mediterranean Lentil Salad is one of those simple dishes that somehow tastes like sunshine in a bowl. It starts with humble canned lentils, but once you rinse them and mix them with fresh vegetables, everything changes, they become light, fresh, and full of life.
I love how quickly this comes together, especially on busy days when I still want something healthy and satisfying. Crisp cucumber, juicy tomatoes, and a bit of finely chopped red onion bring crunch and brightness, while fresh parsley (and sometimes mint if I have it) makes the whole salad feel really vibrant.
The dressing is my favorite part: good olive oil, fresh lemon juice, a touch of garlic, some honey, mustard and a pinch of salt and pepper. It’s simple, but it pulls everything together in the most beautiful way.
I love adding feta and olives, they make it even more Mediterranean and a little more indulgent.
What I really love about this salad is how it improves as it sits. After 20–30 minutes, the lentils soak up the dressing and every bite becomes more flavorful. It’s the kind of dish I make once and then keep sneaking back to from the fridge. Fresh, easy, and honestly just really good food.
How to make lentil salad
Begin with pouring the canned lentils into a fine strainer and rinsing them under cold running water for about 20–30 seconds. Gently shake off the excess water and let them drain well so the salad doesn’t become watery.
Make the dressing
In a small bowl or jar, combine the olive oil, lemon juice, apple cider vinegar, Dijon mustard, honey, minced garlic, salt, and pepper. Whisk until the dressing is well blended and slightly emulsified.
Assemble the salad
In a large bowl, combine the drained lentils with the chopped onion, cucumber, red pepper, cherry tomatoes, and parsley.
Add the crumbled feta and olives, then pour the dressing over the salad. Toss gently until everything is evenly coated and well combined.
Allow the salad to sit for 15–20 minutes before serving, giving the flavors time to meld and deepen.
Serve slightly chilled or at room temperature, and enjoy a fresh, vibrant dish full of texture and brightness. It is perfect as a light meal or a colorful side that only gets better as it sits.

Mediterranean Lentil Salad – Fresh, Healthy, High-Protein Meal
Ingredients
- 1 can (14 oz-400g) lentils , drained and rinsed well
- 1 small red onion , finely chopped
- 1 small cucumber (3 oz – 90g) , sliced
- 1 small red pepper (2 oz – 60g) , diced
- 5 oz (150g) cherry tomatoes , sliced
- A handful fresh parsley , chopped
- 2 oz (70g) Feta cheese , crumbled
- 1 oz (30g) olives
Dressing
- 2 tbsp (30g) olive oil
- 1 tbsp (15g) lemon juice
- 1 tbsp (15g) apple cider vinegar
- 1/2 tsp (3g) Dijon mustard
- 1 clove garlic , minced
- 1 tsp (7g) honey
- Salt and freshly ground black pepper
Instructions
- Pour the lentils into a fine strainer and rinse under cold running water for about 20–30 seconds. Gently shake off excess water and let them drain so the salad doesn’t become watery.
