Ingredients
- 1 ⅔ cup (400g) cottage cheese , small curd works best
- 2 large eggs
- 2 tbsp (40g) honey
- 1 tsp 5g vanilla extract
- 1 cup (125g) all-purpose flour

- 1 tsp (4g) baking powder
- Oil or butter for cooking
Instructions
Prepare the pancake batter.
- In a bowl, whisk together the eggs, honey, and vanilla until smooth.
- Stir in the cottage cheese and mix until combined. You can leave it slightly lumpy or blend it first for a smoother texture.
- Mix in the flour, salt, and baking powder until you get a thick pancake batter.
- If the batter feels too thick, add 1–2 tablespoons of milk.
Cook the pancakes.
