How to make tomato zucchini frittata

Begin with preheating the oven to 375°F (190°C).

Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and zucchini, cooking for 5–6 minutes until softened.

Stir in the garlic and cook for about 30 seconds, until fragrant. Add the cherry tomatoes and cook for another 2 minutes, just until they begin to soften.

Prepare the egg mixture

In a large bowl, whisk together the eggs, Greek yogurt, feta, fresh herbs, salt, pepper, and chili flakes, if using, until well combined.

Pour the egg mixture over the vegetables in the skillet. Gently stir once to evenly distribute the ingredients.

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium zucchini (about 11 oz – 350g) , sliced into thin half-moons
  • 1 cup (150g) cherry tomatoes , halved
  • 1 small onion , thinly sliced
  • 2 cloves garlic , minced
  • 8 large eggs
  • 1/4 cup (60g) Greek yogurt
  • 1/2 cup (50g) crumbled Feta
  • 2 tbsp fresh basil or parsley , chopped
  • Salt and freshly ground black pepper , to taste
  • a pinch of chili flakes
  • 2 2 medium tomatoes (like roma tomatoes) , cut in thin slices

Instructions
 

  • Preheat the oven to 375°F (190°C). Cut the zucchini into half moons.
