Lemon Blueberry Tiramisu – Easy No-Bake Dessert

If you’re looking for a fresh twist on classic tiramisu, this Lemon Blueberry Tiramisu is one of my favorite desserts to make during the warmer months. It has all the creamy, light texture you love, but with bright lemon flavor and juicy blueberries that make every bite taste fresh and vibrant.

Instead of the traditional coffee soak, the ladyfingers are lightly dipped in a homemade lemon syrup, giving the dessert a delicate citrus flavor without overpowering the creamy mascarpone filling. A simple homemade blueberry sauce is layered between the mascarpone, adding a beautiful color and just the right amount of fruity sweetness. The combination of tangy lemon, sweet blueberries, and rich mascarpone creates a perfectly balanced dessert that feels elegant yet incredibly easy to enjoy.

The best part is that it can be made ahead of time, making it perfect for family gatherings, summer celebrations, or whenever you want a dessert that looks impressive without requiring complicated steps. After a few hours in the refrigerator, the layers soften beautifully and the flavors come together into a light, refreshing treat.

Serve it chilled with a handful of blueberries on top for a dessert that’s as beautiful as it is delicious.

Lemon Blueberry Tiramisu

How to make lemon blueberry Tiramisu

Begin with lining the sides of an 8-inch (20 cm) square springform pan with acetate sheets. Have the ladyfingers ready, trimming them as needed so they fit the pan neatly.

To make the lemon syrup, combine the water, sugar, lemon zest, and lemon juice in a small saucepan. Bring to a boil and simmer for about 3 minutes. Remove from the heat and let it cool completely.

Make the blueberry sauce

Add the blueberries, sugar, and lemon juice to a small saucepan.

Cook over medium heat for about 5-7 minutes, stirring occasionally, until the blueberries soften and release their juices. Lightly mash some of the berries with the back of a spoon.

In a small bowl, stir together the cornstarch and water to make a slurry, then add it to the blueberries. Cook for another 1–2 minutes, stirring constantly, until the sauce thickens.

Remove from the heat and let it cool completely.

Prepare the mascarpone filling

In a large bowl, beat the mascarpone until smooth.

Add the powdered sugar, lemon zest, and vanilla extract, mixing until well combined. Pour in the chilled whipping cream and continue mixing until the filling is thick and holds stiff peaks.

Assemble the blueberry Tiramisu

Dip the ladyfingers briefly into the cooled lemon syrup and arrange them in a single layer in the prepared pan.

Spread one-third of the mascarpone filling evenly over the ladyfingers using an offset spatula. Spoon over a little more than half of the blueberry sauce.

Cover with another third of the mascarpone filling.

Dip the remaining ladyfingers into the lemon syrup and arrange a second layer on top. Spread the remaining mascarpone filling evenly over the ladyfingers.

Spoon the remaining blueberry sauce over the top and use a skewer to gently create decorative swirls.

Chill and serve

Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight, so the layers can set and the flavors meld together beautifully.

Before serving, decorate with fresh blueberries and lemon slices.

Slice and enjoy this light, creamy dessert with bright lemon flavor and bursts of juicy blueberries. Store any leftovers in the refrigerator and serve chilled.

Ingredients
  

  • 28 ladyfingers

Lemon Sugar Syrup

  • 3/4 cup (180g) water
  • 1/2 cup (100g) sugar
  • zest of 1 lemon
  • 1/4 cup (60g) fresh lemon juice

Blueberry Sauce

  • 10 oz (300g) blueberries , fresh or frozen
  • 1/4 cup (50g) sugar
  • 1 tbsp (15g) lemon juice
  • 1 tsp (4g) cornstarch
  • 1 tbsp (15g) water

Mascarpone Filling

  • 1 pound (500g) Mascarpone cheese , room temperature
  • 2/3 cup (80g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • zest of 1 lemon
  • 1 ¼ cup (400g) whipping cream (35% fat) , chilled

For Decorating

  • fresh blueberries
  • lemon slices

Instructions

  • Set aside to cool.

Prepare the blueberry sauce.

  • Add the blueberries, sugar, lemon juice to a small saucepan.

  • In a large bowl mix Mascarpone cheese with powdered sugar, lemon zest and vanilla extract.
  • Add whipping cream.

  • Continue mixing until stiff peaks form.

Assemble the blueberry Tiramisu

  • Dip ladyfingers in the lemon sugar syrup and arrange in a single layer in the pan.

  • Spread a third of Mascarpone mixture over the ladyfingers. Use an offset spatula to spread evenly.

  • Gently spread more than a half of the blueberry sauce.

  • Cover with another third of Mascarpone mixture.

  • Dip the remaining ladyfingers into the lemon sugar syrup and arrange another layer of ladyfingers on top of the Mascarpone mixture.
